Broad Bean and Snow Pea Salad with Almond and Feta

© 2024 | http://angiesrecipes.blogspot.com

Green, fresh and flavour-packed, this simple salad is great to make at any occasion. Broad beans, aka fava beans, are a good source of protein, carbohydrates and vitamins. The rubbery skins of broad beans are edible, but I prefer the double podded ones for the salad. It does take a little bit of extra time and patience to remove the skin of each individual bean, but totally worth it! Use peas or edamame instead if you prefer.

  • 150 g Snow peas
  • 200 g Podded broad beans, fresh or frozen
  • 1/2 Red onion, thinly sliced
  • 2-3 tbsp Aalmond flakes, roasted
  • 1 tbsp Parsley, chopped
  • 50 g Feta, crumbled
  • 2 tbsp Extra virgin olive oil
  • 2 tsp Red wine vinegar
  • 1/2 tsp Sea salt
  • Black pepper
  1. Bring a medium pot of lightly salted water to a boil. Add shelled beans to the boiling water and blanch for 2 minutes. At the last 30 seconds, add in snow peas.
  2. Drain and cool them immediately in iced water or under cold running tap water. Drain well.
  3. Remove the rubbery outer skins of the broad beans by pinching them gently with your fingers to reveal their bright green, super tender flesh.
  4. Place snow peas, broad beans and the remaining ingredients in a large bowl. Season with salt and pepper. Toss to combine. Serve immediately.

Lovely colours, we do not have any of those here, but sounds and looks refreshing. I made potato oats sunflower crackers this morning but had to bake them down in the basement where we have put our old oven because it is 45C outside and I cannot heat up the kitchen even more as it is already 30C in it LOL Wish you could send us some of your refreshing northern cold.

Me gustan las habas y los guisantes crudos sin vainas, con ensalada no los he probado pero pinta muy bien.

This salad sounds so fresh and nutritious! I agree, double podding those broad beans is a bit of effort, but it really pays off in texture and taste.

We finally - FINALLY - found frozen peel broad beans. They are not easy to find here, We will love using them to make this salad. Thanks, Angie!
