This date curry takes less than 20 minutes to make and is a simple way to pack in those vitamins and fiber without sacrificing flavour. The pitted dates are first wrapped with deeply nutty and earthy Jamon Serrano ham and then fried until crispy before adding to the curry sauce with green beans to create a perfectly delicious combination. Use fresh green beans if you can, otherwise, frozen one works too.

- Cut the Jamon or breakfast bacon slices in half crosswise. Use half slice of Jamon or bacon to wrap around a date. Secure with a toothpick if necessary.
- Peel and dice the onion and garlic.
- Heat 1 tablespoon of ghee in a large pan over high heat. Add in prepared dates and pan fry for about 5 minutes, turning occasionally. Remove from the pan and the toothpicks if using.
- Heat the remaining tablespoon of oil in the pan. Lower the heat to medium. Add in diced onion and garlic and cook briefly, then sprinkle the cinnamon and curry powder over. Pour in broth and add the green beans, cover and cook for 8-10 minutes.
- Stir in the heavy cream and harissa paste. Return the dates to the pan and heat everything over a low heat for 5 minutes. Garnish with chopped parsley and pepper rings.

This is another yummy looking meal. I'm not a ham eater, but I do like Spanish Jamon. I think it's either the way they slice it or what the piggies eat. But I've never seen it in sausage form. Happy Friday.
