Spiced Chicken Traybake with Pine Nuts

There is just something so relaxing about throwing everything into a roasting pan and then popping into the oven where the chicken drumsticks bake merrily away until golden, juicy and tender without any input from you. Big on flavour, low on effort, ready in an hour and there is much less washing up at the end, too. If desired, add some chopped sweet potatoes or pumpkins at the bottom of the roasting pan, so they soak up all the juices from the spices, lemon and chicken as they cook.

 
  • 2 Organic lemons
  • 3 tbsp Extra-virgin olive oil
  • 3 Garlic cloves, crushed
  • 1 Red onion, chopped
  • 2 Cinnamon sticks, broken in half
  • 3 Bay leaves, torn in half
  • 1.2-1.5 kg Chicken drumsticks with skin on and bone in
  • 50 g Pine nuts
  • Coriander leaves, chopped
  1. To marinate the chicken, slice one of the lemons, discarding the ends, and juice the other. Combine the lemon juice and olive oil, garlic, onion, cinnamon sticks, bay leaves and sliced lemon in a large bowl. Add the chicken pieces to the bowl and coat with the marinade. Cover and marinate for 2 hours, or preferably overnight.
  2. To cook the chicken, preheat the oven to 220C/430F. Season the chicken and arrange skin-side up in a single layer in a large roasting tray, drizzling over the marinade and tucking the lemon slices in between them.
  3. Roast for 55-60 minutes until golden, scattering over the pine nuts for the final 15 minutes. Serve scattered with chopped coriander.

The always good ingredients: lemon juice, olive oil, garlic, onions , don't let the chicken pieces escape. They turn them into a delicious basis for a royal meal with nuts and other goodies.

Bastantes veces preparo pollo al horno con distintos ingrediente. Es una receta sabrosa y limpia que sirve para comida o cena y siempre está buenisima. Como tu asado, que es súper rico.

I have never head pine nuts before, what do they taste like? I made beans and carrot salad for lunch today and will be roasting potatoes, parsnips and squash tomorrow! Might make some garlic and dill polenta for frushtuck!

@DEZMOND Nutty with very mild sweetness..a bit like cashews. They turn rancid very quickly.
