Grilling radicchio helps temper the bitterness in this hearty and beautiful vegetable. Radicchio and fresh goat cheese pair well and compliment each other. Candied walnuts and juicy pomegranate seeds give a distinctive lift and touch of sweetness to this warm salad. It is simple and quick to prepare and makes an impressive and exciting side dish that will liven up any meal.

  • 2 head Radicchio
  • 2 tbsp Olive oil
  • Salt & pepper
  • 100 g Fresh goat cheese
  • A handful of baby arugula (or flat parsley leaves)
  • 30 g Pomegranate seeds
  • 80 g Candied walnuts
  • Balsamic vinegar, for dressing
  1. Remove and discard outer radicchio leaves that appear wilted. Wash and dry the radicchios. Slice heads of radicchio lengthwise into even quarters if small, and sixths if slightly larger.
  2. Brush sliced edges with olive oil and season well with salt and pepper. Grill over medium-high heat 3-4 minutes on each side or until edges are slightly charred and have softened slightly. Remove from grill to large platter. You can do this in your grill pan too.
  3. Crumble fresh goat cheese over warm radicchio. Sprinkle with baby arugula leaves, pomegranate seeds and candied walnuts. Top everything with a drizzle of balsamic vinegar to taste.

For some reason I love saying radicchio! Radicchio! Radicchio! I went to buy some spring onion at the green market today but came back with three new festive Milkas.....

Radicchio is a great addition to a salad. I should use it more often.

I am intrigued with the grilling of the radicchio, because of the bitterness, I’ve never really liked it. Your salads always look so satisfying with lovely textures and flavours.

Hi Angie, Very attractive salad. Sadly, radicchio is high in Vitamin K, so only the nuts, seeds and cheese work with my diet... Take Care, Big Daddy Dave

Grilling radicchio is a game-changer, indeed! The contrast of the slightly bitter radicchio with the creamy goat cheese, sweet candied walnuts, and bursts of pomegranate seeds sounds like a symphony of flavors. A quick and impressive side dish to elevate any meal – can't wait to try this combination!
