Homemade from scratch, this budget-friendly sauerkraut quiche makes a wonderful winter dish with bacon and boiled eggs. Delicious served as an evening meal with a warming soup, or as a light lunch with some vegetables or salads. This quiche is quick to prepare and can be served hot or cold. If you don't feel like making the pork rind pastry for this quiche, just use a regular shortbread crust or use ready-made shortcrust pastry.

- Preheat the oven to 180C/350F. Lightly grease a 20cm / 7inch springform pan. Prepare the pork rind crust and press into the bottom and 3-4cm up the sides the prepared springform pan. Chill for 30 minutes.
- Line the pastry case with crumpled baking paper and fill with pastry weights or some dried beans. Blind bake for 15 minutes, then take out the beans and paper and cook for another 5 minutes or until the pastry looks dry and golden.
- Meanwhile bring a saucepan of water to a boil over medium-high heat. Using a slotted spoon, gently lower the eggs into the pan. Cook for 6-7 minutes. Leave to cool and cut in half.
- Heat a skillet over a medium heat. Add in bacon cubes and cook for 2-3 minutes. Add in sliced onion and cook for a further 2-3 minute.
- Squeeze out the liquid from the sauerkraut in a sieve and add to the pan. Season with blac pepper, stir and cook for a few minutes. Remove from the heat, cool slightly.
- Spread the filling over the pre-baked pastry base. Place the halves of the boiled eggs on top.
- Whisk the remaining 4 eggs with the cream and a little salt and pepper. Pour the egg mixture over the filling. Bake the sauerkraut quiche for 45 minutes until golden brown.

Looks uber lecker und pretty. Most people leave sauerkraut for winter in their homes here, usually two or three big barrels, one with diced sauerkraut, one or two with whole cabbage for our national dish called sarma.
I personally do not eat it as my tummy does not like cabbagy veggies, and this mix with eggs and cream would be a death bomb for me LOOOOL During the winter I will just roast shredded sauerkraut with just a bit of oil in the oven and nothing else.
