Ginger crunch or ginger slice is a classic New Zealand bar that's basically just a delicious shortbread base topped with a smooth ginger icing. They are best enjoyed with a nice hot cup of tea or coffee. The sea salt atop is completely optional. However, I would have topped the icing with some sliced crystallised ginger if I had them.

- Preheat oven to 180C/350F. Grease a 20cm square baking pan and line the base and sides with baking paper.
- Sift flours, baking powder and ginger into a bowl and mix to combine. Place butter and sugar in the bowl of a stand mixer with the paddle attachment and beat until thick and pale. Fold in the flour mixture until well combined. Press mixture firmly into prepared pan and prick all over with a fork. Bake for 25-30 minutes until light golden.
- When the base is nearly cooked, make the topping by heating together butter and golden syrup in a medium saucepan until melted and starting to bubble. Stir in icing sugar and ground ginger to combine evenly and spread mixture over cooked base while still hot.
- Set aside to cool at room temperature for 1 hour or until set. Sprinkle the sea salt on top or stud with pieces of crystallised ginger.
- Using a hot knife, cut slice into 16 squares to serve. Store the remaining in a sealed container in a cool place for up to a week.
