Miso Banana Oat Bars

Miso gives these oat bars a beautiful, nutty flavour and satisfying salty sweet depth. White or shiro miso is the sweetest and mildest type, but you can use yellow or brown ones to bake these bars too.
They are so quick and easy to make and are perfect as a snack, breakfast, or healthy dessert! Store the cooled bars in an airtight container in the refrigerator for 1 week, or the freezer for up to 6 months.

 
  • 175 g Butter, cubed, plus extra to grease
  • 125 g Light brown sugar
  • 225 g White spelt flour
  • 100 g Rolled oats
  • 3 Large ripe bananas, mashed
  • 1 1/2 tbsp Miso paste (white, yellow or brown)
  • Icing sugar, to dust
  1. Preheat the oven to 180C/350F and lightly grease and line a 22 x 30cm baking pan.
  2. In a bowl, rub together the butter, brown sugar, spelt flour and rolled oats until combined and crumbly. Firmly press half of the mixture into the prepared baking pan.
  3. Mix together the bananas and miso and spread this mixture over the base. Sprinkle the remaining crumble over the top, and pat down lightly.
  4. Bake for 35 minutes on the middle shelf or until filling is bubbly and topping is golden. Cool completely, in the pan, on a wire rack. Cut into 12-16 bars. Dust with icing sugar and enjoy with ice cream or simply with a cup of tea.

@DEZMOND A Japanese condiment made by fermenting soya beans with salt and a fungus called koji; it is salty, nutty, and slightly sweet all at the same time. But these days you will see miso made with a combination of barley, or wheat with soya.
