Thai Curry Baked Chicken Drumsticks

Make this delicious one pan meal with this easy Thai-inspired recipe. Crispy, juicy chicken drumsticks in a not-so-authentic, but deliciously aromatic Thai curry sauce are serve plenty of fresh cilantro and red chilli pepper for a little more heat. The sauce is fantastic to pour over some steamed rice or blanched rice noodles.

 
  • 1 kg / 8-9 Chicken drumsticks
  • Salt and pepper
  • 2-3 Lemongrass stalks, bashed
  • 1-inch piece Fresh turmeric, peeled and chopped
  • 1-inch piece Fresh ginger root, peeled and chopped
  • 1 tbsp Cilantro root, chopped
  • 4-6 Garlic cloves, peeled and chopped
  • 2 tsp Lime zest
  • 3 tbsp Coconut oil
  • 1 Large red onion, peeled and sliced
  • 1/2 tbsp Coriander powder
  • 1 tsp Cumin
  • 1 tbsp Fish sauce
  • 1 x 400 ml can Coconut milk
  • 400 ml Chicken broth
  • 1 tbsp Freshly squeezed lime juice
  • 2 tbsp Cilantro, chopped
  • 1 Red chilli pepper, cut into rings
  1. Preheat oven to 180C / 350F. Season the chicken drumsticks with salt and pepper.
  2. Using a pestle and mortar or a blender, bash lemongrass, turmeric, ginger, cilantro root, garlic cloves and lemon zest until you have a coarse paste.
  3. In an oven-proof skillet, melt coconut oil over a medium-high heat. Brown the chicken drumsticks. Remove and set aside.
  4. In the same skillet, add in sliced red onion and cook until soft and almost translucent, 5 minutes. Now add in the lemongrass paste. Stirfry for 2-3 minutes until aromatic. Now add in corander, cumin and fish sauce. Cook until well combined and aromatic.
  5. Return the chicken drumsticks to the skillet together with coconut milk, broth and lime juice. Bake in the hot oven for 25-30 minutes or until chicken is cooked through. Garnish with cilantro and chilli rings. Serve with steamed rice.

I love Thai cuisine especially its tom yum and pineapple fried rice. I don't really into its curry though but agree that curry is so perfect to go with steamed rice.

I've recently read about the history of curry somewhere, I don't eat it myself. Here we have our national spice or seasoning called Vegeta, I think you have it in your shops too, it turns every dish into heaven and I cannot eat anything without it.
