Baked Mushrooms with Goat Cheese, Jamón Ibérico and Truffle

Easy baked mushrooms with goat cheese would make the perfect starter for any dinner party! Ready in 20 minutes - each mushroom is flavoured with pesto sauce, then top with a slice of soft goat cheese, Jamón Ibérico ham, and pine nuts, baked until cheese warm and gooey, then served with shaved black truffle and some salad leaves. This recipe can be swapped with other cheeses like blue cheese or cream cheese and Jamón Ibérico can be replaced with prosciutto.

 
  • 250 g / 7 Brown mushrooms, stems removed
  • 2 tbsp Pesto
  • 150 g Semi-aged​ goat cheese log, sliced into 7 rounds (I used Président Sainte Maure)
  • 4 slice Jamón Ibérico
  • 1 tbsp Pine nuts
  • 1 tbsp Extra-virgin olive oil
  • 1 tbsp Tarragon (or thyme), chopped
  • Freshly milled black pepper
  • Black truffle
  • Salad leaves, to serve
  1. Preheat the oven to 200C/400F. Remove stems from mushrooms. Spread pesto over inside of mushrooms and place on a baking tray.
  2. Slice goat’s cheese and place onto each mushroom. Top with jamón ibérico ham and scatter over some pine nuts.
  3. Drizzle with olive oil and sprinkle chopped tarragon over. Season with freshly milled black pepper and bake for 12-15 minutes until cheese is melted.
  4. Remove from the oven and shave a couple of slices of truffle over. Serve them with your favourite salad leaves.

looks delicious, years and years ago we would make stuffed mushrooms-so good we even raised goats for awhile and made our own cheese-actually Larry made the cheese-so good
