Black Radish Salad with Red Cress

Black radishes have an earthy, spicy, pungent, peppery flavour reminiscent of horseradish and are great for both raw and cooked. When eaten raw, it's better grate, chop or slice the radish. It becomes so much milder and has tastes of carrots when cooked. The black skin is edible, peel if a milder taste is desired. The black radish root is composed of flavonoids, but also of many vitamins, including vitamin A, group B vitamins, including B9, and vitamin C. It is anti-infectious, antioxidant and anti-inflammatory.

 
Dressing
  • 1 Black radish, grated
  • 1 Red onion, sliced
  • 1 tbsp Dill, chopped
  • Red radish cress
  • Pomegranate seeds, optional
  • 6 tbsp Sour cream
  • 2 tbsp Homemade mayonnaise
  • 1 tbsp White balsamic vinegar
  • 1 tsp Maple syrup
  • Salt and pepper
  1. Clean the radish, peel if desired, and grate finely, preferably with a food processor. Salt the grated radish well, mix well and set aside for approx. 15 minutes.
  2. Thinly slice the red onion and add to the radish together with chopped dill.
  3. Combine all the ingredients for the dressing. Toss the radish with the dressing until well combined.
  4. Garnish the salad with red radish cress or pomegranate seeds. Enjoy the salad with some homemade farmer bread spread thickly with butter.

Angie, this is absolutely delightful. Over the years I have really grown to enjoy the pungency and crunchiness of radishes. I've learned when roasted their biting flavor grows mild and buttery-much like roasted garlic. This is a great recipe!

OK ! This hello is from eastern coastal Australia ! Have tried all our main supermarket chains and then a few more expensive smaller venues. Nothing ! Nought ! Nada !!! We normally have a wonderful array for choice - not in this ! Love the recipe . . . may try ordinary daikon radish which this fun dish resembles and see what taste combos ensue . . .

It's Judee from Gluten Free A-Z Blog- OMG this brings back memories. My father, whose family was from Russia, used to love to grate a black radish. I never saw anyone else eat it since then. It looks delicious and I'm sure very healthy.

Red cress looks so lovely! I haven't seen black radish in a long time, but it so extremely healthy. Especially if you dig a hole in it, pour some honey in it, and then drink the juice that appears after a few hours.
