Sprinkling with freshly homemade dukkah really takes some simple baby cucumber boats with labneh up a few notches. They are quick to make, crunchy and keto-friendly - great for when you’re in the mood for a healthy snack, or entertaining.

- To make dukkah, scatter sesame seeds in a small non-stick skillet over medium heat. Cook, shaking the skillet often, for 3-5 minutes or until lightly toasted and aromatic. Add coriander, cumin and black pepper. Cook, shaking the pan a further 1minute. Turn off the heat and transfer to a bowl. Finely chop the toasted nuts and add to the sesame seed-spice mixture together with the salt. Stir to combine then set aside to cool.
- Cut each baby cucumber in half lengthwise.
- Combine labneh, lime juice, minced garlic, and chopped dill together. Taste and season with salt and pepper.
- Spread the labneh dip generously over the cut side of each baby cucumber. Sprinkle the dukkah over the labneh and scatter extra chopped dill over if desired. Enjoy!

Cucumber boats - I like the concept :) homemade dukkah sounds like such a treat.
