Thinly sliced red cabbage is tossed together with red onion, pears, pomegranate seeds and toasted pine nuts dressed with a simple mustard vinaigrette. It's crunchy, zesty, colourful and ridiculously easy and quick to make.

- Combine the cabbage, onion, pear and pomegranate seeds in a large bowl.
- Place pine nuts in a small fry pan over medium heat and cook for 2 minutes, stirring regularly, or until golden brown. Remove from heat and set aside.
- To make the dressing, whisk together the oil, vinegar, mustard, salt and pepper until well combined.
- To serve, toss the pine nuts through the cabbage mixture and drizzle with the dressing.

What a wonderfully, colourful salad. That would definitely cheer me up on such dreary days. I love the combination of the fruit and nuts in a salad, particularly with a light dressing that isn't overpowering.

I have never thought to pair pears with cabbage, but it sounds wonderful. My mother used to make all sorts of salads using pears, but I never do and I'm not quire sure why. Thanks, Angie!
I am a huge fan of red cabbage and love it in any salad. It sounds like a wonderful combination with the pears. I like to use pine nuts but they are so expensive here that I usually substitute something else.
