Red Cabbage Salad with Pears and Pine Nuts

Thinly sliced red cabbage is tossed together with red onion, pears, pomegranate seeds and toasted pine nuts dressed with a simple mustard vinaigrette. It's crunchy, zesty, colourful and ridiculously easy and quick to make.

  • 1/2 Small red cabbage, shredded
  • 1 Red onion, thinly sliced
  • 2 Pears, core removed, thinly sliced
  • 2 tbsp Pomegranate seeds
  • 50 g Pine nuts
  • 2 tbsp Olive oil
  • 2 tbsp White wine vinegar
  • 2 tsp Dijon wholegrain mustard
  • Salt and cracked black pepper
  1. Combine the cabbage, onion, pear and pomegranate seeds in a large bowl.
  2. Place pine nuts in a small fry pan over medium heat and cook for 2 minutes, stirring regularly, or until golden brown. Remove from heat and set aside.
  3. To make the dressing, whisk together the oil, vinegar, mustard, salt and pepper until well combined.
  4. To serve, toss the pine nuts through the cabbage mixture and drizzle with the dressing.

What a wonderfully, colourful salad. That would definitely cheer me up on such dreary days. I love the combination of the fruit and nuts in a salad, particularly with a light dressing that isn't overpowering.

this is a fabulous salad! I think cabbage is really underused and under appreciated, at least in the U.S. Love the dressing, too!

I have never thought to pair pears with cabbage, but it sounds wonderful. My mother used to make all sorts of salads using pears, but I never do and I'm not quire sure why. Thanks, Angie!

I am a huge fan of red cabbage and love it in any salad. It sounds like a wonderful combination with the pears. I like to use pine nuts but they are so expensive here that I usually substitute something else.

Very freshly balanced with sweet pears, tart pomegranate seeds, pine nuts, mustard vinaigrette - each ingredient has their own characteristic flavor and when put together, blending in so well together
