Beef bourguignon (aka beef Burgundy) is a traditional French dish of slow cooked beef in a red wine sauce, with pearl onions, button mushrooms and bacon lardons. It's traditionally named from the Burgundy region in France, where it originated. It’s cooked until the meat is falling apart, and the wine-rich gravy thickens slightly to coat the meat.
This version from Colin Fassnidge via DELICIOUS uses the same beef bourguignon flavour on beef short ribs to upgrade this timeless stew. Beef ribs Bourguignon is always better the next day or even a few days later. It really needs time to mature and have the flavours marry together. Serve with some crusty bread to mop up all the sauce or over some creamy polenta or mashed potatoes, and of course a glass of red Burgundy!

This is an utterly simple, yet quite unlike any other salad. The humble onion gets a makeover with honey glazed pecans and apple vinaigrette. I have roasted them in oven, but if you are blessed with a grill, then grill them on medium for 7-8 minutes until lightly softened and charred. The recipe works just as well with other types of onions, but red one looks prettier. Walnuts, hazelnuts or pine nuts are great substitutes for pecans. They are excellent with grilled fish, or kebab and flat bread.

Bobotie (pronounced ba-boor-tea) is a much-loved casserole with curried ground beef at the bottom and a thin layer of egg custard on top, that originated in South Africa in the 17th century. Bobotie is recognized as South Africa's national dish. With spice influences introduced by the Cape Malay community, who are descendants of Indonesia and Malaysia.
For bobotie, a mixture is first prepared from beef mince, onion, ginger and garlic, then flavoured with curry paste, numerous spices, sultanas, and sweet mango chutney for a delicious finish, before being filled into a casserole dish, poured with custard cream and baked in the oven until golden and crispy. The result should be a balance between spicy and sweet with a fruity note.

These roasted parsnips are super easy to make and require minimum effort and will elevate any dish you serve them with. Thyme works beautifully with parsnips, but you can use rosemary, bay leaves or sage. I prefer fresh herbs, but dried one would work too.
