Cucumber and Feta Salad

Made with ridged cucumber, yellow cherry tomatoes, Kalamata olives, and feta Lesbos, this easy Mediterranean-inspired salad is perfect as a light summer lunch or served alongside any meal.
Ridge cucumbers, or outdoor cucumbers, tend to be shorter, plumper and they've got a rougher skin. You can use other varieties, such as long, slender English or smaller, (almost) seedless Persian cucumbers.

 
  • 2 Ridged cucumbers, scrubbed
  • 1 tbsp Extra virgin olive oil
  • 2 tsp Red wine vinegar
  • 60 g Kalamata olives
  • 100 g Cherry tomatoes, halved
  • 1 Small red onion, thinly sliced
  • 200 g Feta Lesbos, halved diagonally
  • 1/2 tsp Dried oregano leaves, to serve
  • Dried chilli flakes, to serve
  1. Use a vegetable peeler to peel thin ribbons from the cucumber. Place in a bowl of iced water. Set aside for 1 hour or until curled. Drain and gently pat dry.
  2. Meanwhile, whisk the olive oil and red wine vinegar together in a small bowl and season.
  3. Place the cucumber ribbons, olives, tomato, onion and half the dressing in a bowl. Toss to combine. Place on a serving plate. Top with the feta. Sprinkle the feta with the oregano and chilli flakes. Drizzle with remaining dressing.

This is one of my husband's favorite salads, he calls it a summer salad. I've never thought to use chili flakes in it but I'll be doing that soon. Karen (Back Road Journal)

Me parece perfecta la ensalada, también utilizo ese pepino y el resto de ingredientes, excepto el feta que lo uso solo de vez en cuando. El vinagre que pongo siempre es de manzana, me gusta más su sabor. Pero no dudes que si me la pones por delante, disfrutaré mucho degustandola.

I actually have everything in the refrigerator for the salad, though my cucumbers are the Armenian variety. I imagine they will work just perfectly with this… David (C&L)
