Pogača Butter Bread
Sunday, November 17, 2024Pogača, or pogacha is a white bread that Serbians, Croatians, Macedonians and other Balkans, Turks, and Hungarians claim as their own. There are as many recipes and variations for it as there are shapes, although round is traditional. There's also a fasting variant that contains no eggs, milk, or butter. You can make this bread using white plain flour, or a mix of wholegrain and plain flours. They are soft, pillowy and buttery. It's ideal for a party or to take to a gathering. To make it even more decadent and interesting, add some cheese, ham and herbs after brushing with the butter.
Gluten Free Beetroot Chickpea Pancakes
Saturday, November 02, 2024Fancy a change and lots of colour in the morning? Then you should these beetroot pancakes for a vital start to the day. Not only are they beautiful to look at, they are also made with some healthy ingredients. You don't have to compromise on flavour and sweetness even if you are trying to cut back the consumption of refined white sugar. These pancakes are sweetened with honey and if you want it sweeter, then serve them with maple syrup. In case you want to avoid sugar completely, I would recommend using erythritol or xylitol, which gives a more natural sweetness and mouth feel.
Beetroot is very healthy and always looks great when used to colour food. The bright red colour is simply special. Any cooked beetroot works, use roasted beetroot if you prefer a deeper purple colour and richer flavour. I used chickpea flour as an alternative to wheat flour. This makes these pancakes lower in carbohydrates and richer in fibre, as well as being gluten-free.
Baked Spinach and Tomato Omelette
Thursday, October 31, 2024This is a great breakfast or brunch on weekend or any time you have company. It is low-carb, high-protein, full of delicious baby spinach, cream, Parmesan cheese, and of course lots of eggs! Use a terrine if you have one, otherwise, a loaf pan will work just fine. I used a silicone loaf pan and it spread a bit in the middle since the omelette mixture was heavy. You can also make this in a 20cm round cake pan.
Whole Spelt Banana Bread with Honey and Applesauce
Friday, October 04, 2024Homemade banana bread is one of life’s simple pleasures. It's sweet, tender and delicious. However, classic banana bread is usually loaded with refined sugar and calorie dense. This quick bread is made with freshly milled wholegrain spelt flour, homemade applesauce and naturally sweetened with very ripe bananas and honey, and it tastes as flavourful and supermoist as a traditional one and no-one will guess it’s better for you.
Mustard Yeast Gugelhopf
Tuesday, September 03, 2024A classic gugelhopf, aka kugelhopf, is a yeasted bread, orignated from Austria and southern Germany, similar to a French brioche, which is fantastic for breakfast or afternoon tea served with extra butter. You can make the kugelhopf plain, with dried fruits, chocolate, spices or savoury with mustard or/and bacon. If you can't find fresh yeast, use 1 package / 7 grams of active dried yeast. Enjoy it warm with extra mustard sauce or herb crème fraîche.

Saturday, August 31, 2024This spiced pumpkin and honey bread from Matt Moran on DELICIOUS is fantastic for afternoon tea with honey mascarpone or toast a slice for breakfast and top with a pat of butter. If there are any leftovers slices, they make the perfect lunch box filler. The orginal recipe called for white spelt flour, I used a mixture of white and whole meal spelt. Feel free to use 100% whole spelt flour or just plain flour.
Blackberry Hazelnut Flapjacks
Saturday, August 17, 2024British flapjacks, aka cereal bars or oat bars, are made from oats, golden syrup, butter, and sugar. They are quick, easy to make and budget friendly. The variations on the traditional recipe are endless and this one is based on the recipe I found on BBC Good Food. I replaced the sugar with erythritol and used pomegranate syrup instead of golden syrup. You can use any seasonal fruit you have to make these flapjacks, such as cherries and apricots and experiment with different nuts or seeds. They are great for breakfast on the go, lunch boxes, picnics or afternoon tea.
Blackberry Bread
Saturday, June 29, 2024This flavorful, incredibly moist bread is easy and just bursting with blackberry flavour. It takes only 15 minutes to prepare and just over an hour to bake. Use fresh berries if you can, if using frozen one, don't defrost them and toss with a tablespoon of flour mixture before folding into the batter. Also baking time might be longer since frozen berries have extra moisture. Serve for breakfast or as an afternoon treat with a cup of coffee or tea.

They are great as a snack, breakfast and are also wonderful to pack as part of a picnic.
Bread Rolls with Bacon, Red Onion, and Thyme
adapted from Irish TimesSuper Seedy Vanilla Bars
Wednesday, June 12, 2024These seedy vanilla bars from Donna Hay are scratch-made from chia, pepitas, sesame, Corinthian raisins (dark black currants) desiccated coconut, vanilla and honey. Lots of healthy fat are packed into these little treats, which make a perfect, clean, on-the-go snack to keep you full and nourished.
Vanilla powder is whole vanilla beans that have been dried and processed into a powder. It has a more concentrated and intense vanilla flavour than vanilla extract or paste.
Corinthian raisins are often called currants, and sometimes called Zante currants. But in fact they are not currants at all. They are truly raisins, dried versions of the sweet, seedless grape called Black Corinth. They are so much smaller than regular raisins or sultanas.
There are three different types of dried grapes: raisins, sultanas and currants. Raisins are dried white grapes. Sultanas are dried white grapes from seedless cultivars. Currants are dried, dark red, seedless grapes produced in Greece.

Saturday, March 02, 2024The delicious combination of hard-boiled eggs, crispy bacon, creamy avocado, earthy aged Cheddar cheese and fresh salad not only tastes great, but also provides a balanced mix of protein, healthy fats and fibre. Halloumi Muffins with Basil and Nigella Seeds
Tuesday, January 30, 2024A simple savoury muffin recipe made with spelt, nigella seeds, basil and Halloumi cheese. They are fantastic picnic food and perfect as a healthy lunch box treat, delicious eaten alongside a soup or a stew, or make a very tasty addition to a brunch table.
They are best eaten on the day they're baked – ideally fresh from the oven, but they will keep for up to 3 days in an airtight container, or freeze for up to a month. As muffins need to be worked as little as possible so that the texture stays light and tender, keep the amount of stirring you do to a minimum.
