For a quick 30-minute meal you really can't beat these delicious spiced lamb chops with a homemade salsa verde, which takes this dish to whole new level of deliciousness. If desired, serve them with a delicious medley of roasted vegetables or some cauliflower rice for a healthy and nutritious low carb dinner.

- Season the lamb with salt and pepper then sprinkle with the cumin and turmeric.
- Heat a little tallow in a skillet and when hot, cook the lamb chops for about 2 minutes each side for medium-rare or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.
- Meanwhile, put all the ingredients for the salsa verde in a food processor, season and process until smooth and bright green.
- Serve the lamb chops with lamb’s lettuce or rocket leaves and pomegranate seeds, and drizzle with the salsa verde.

Cannot believe you eat little lambs.... I love all the greens in the photos. We planted basil and chard last week in our yard, hope something grows out of it.
Funny coincidence -- I served lamb lollipops with salsa verde last week. I like your coating for the lamb -- I need to try that as I simply did olive oil, salt, and pepper..
