Za'atar Chicken with Lemon Tahini Sauce

A super easy and healthy chicken dish that’s packed with awesome Middle Eastern flavour thanks to a generous amount of za'atar, lemon and garlic. I served the chicken with a tahini lemon dressing, but a Greek yoghurt dressing would be great too. Za'atar is a versatile herb blend deeply rooted in Middle Eastern and Levant cuisine and offers a unique flavour with a balanced blend of tart, spicy, and slightly sour flavors. It typically contains toasted sesames, thyme, oregano, marjoram, sumac and salt.

 
Tahini Lemon Sauce
  • 2 tbsp Freshly squeezed lemon juice
  • 4 Garlic cloves, minced
  • 4 tbsp Extra virgin olive oil
  • 2 tbsp Za’atar
  • 1/2 tsp Sea salt
  • 6 Boneless skinless chicken thighs
  • 2 tbsp Parsley or cilantro, chopped
  • 3-4 Tahini
  • 2 tbsp Freshly squeezed lemon juice
  • 1 Garlic clove, chopped
  • 3 tbsp Water
  • 1/4 tsp Sea salt
  1. In a bowl whisk together the lemon juice, garlic, extra virgin olive oil, za'atar and salt for the marinade. Place the chicken legs in a bowl and pour the marinade overtop. Make sure all of the chicken pieces are coated in the marinade before transfering the chicken to the fridge to marinate for at least an hour but ideally overnight.
  2. To make the tahini sauce, combine the tahini, lemon juice, garlic, water and salt in a blender. Blend until smooth and light. Set aside in the fridge until ready to serve. This can be made up to 2 days in advance.
  3. Preheat a grill or grill pan to medium high heat and lightly oil the grill pan. Remove the chicken from the marinade and cook for 6-8 minutes. Flip and cook the chicken for an additional 6-8 minutes on the other side. You might need to do this in batches.
  4. Garnish with chopped herb and drizzle the tahini sauce over. Serve with the remaining sauce aside.

This looks tasty. I've seen za'ater in stores but have never tried it. It sounds interesting. I'm going to try my first fougasse bread today. I've eaten it, but never made it. i'll let you know how it goes.
