Sweet, tangy and spicy, these grilled chicken thighs are bursting with wonderful Asian flavours. Chicken thighs first marinated in a fragrant mixture of coconut cream, lemongrass, ginger, sambal oelek, sugar and lime, then grilled to perfection and served with a refreshing herby avocado salad.

- 2 Lemongrass stalks, chopped, green ends removed
- 6 cm piece Ginger, peeled and chopped
- 6 Garlic cloves, peeled
- 200 ml Coconut milk
- 80 ml lime juice (roughly 3 limes)
- 1 tsp Ground turmeric
- 4 tbsp Xylitol or caster sugar
- 1 tsp Sea salt
- 30 g Purchased sambal

- 8 Boneless chicken thighs, skin on

- 2 tbsp Avocado oil (or olive oil)
- 2 tbsp Lime juice
- 1 tsp Xylitol or caster sugar
- 1 Garlic clove, finely chopped
- 2 Avocados, cut into wedges
- 50 g Coriander leaves
- 30 g Mint leaves
- 1 Red onion, sliced
- 1 Red chilli pepper, sliced

- To make the marinade

©angiesrecipes for the chicken, blitz the lemongrass, ginger and garlic in a food processor until finely ground. Add the coconut milk, lime juice, turmeric, xylitol or sugar and salt and blitz again. Add the sambal and stir to combine. Reserve one-third of the marinade in a small container in the refrigerator. Place the remaining marinade in a large bowl along with the chicken. Cover and chill for 4-6 hours or overnight.
- Heat the barbecue to medium-high or heat your grill pan over high heat. Grill the chicken for 8-10 minutes each side. Remove from the heat and let rest for 3 minutes.
- While the chicken is cooking, bring the reserved marinade to a simmer in a small saucepan and cook until reduced and turned orange coloured.
- For the salad, shake olive oil, lime juice, xylitol or sugar, and garlic in a jar. In a large bowl, toss together the remaining ingredients. Drizzle over the dressing.
- To serve, place the grilled chicken on a large plater and serve the salad and the sauce alongside the chicken.
