Muffins with licorice toffee? To be honest, that sounds a bit strange at first, doesn't it? I tried the combination anyway, since my husband loves licorice. Anyone expecting a standard sweet muffin probably won’t like the licorice flavour. But if you like licorice candy, and are adventurous enough to try new things, then these licorice toffee muffins are perfect for you. You can use either sweet or salted licorice for the recipe. To intensify the flavour, add a couple of tablespoons of licorice liqueur to the batter too.

 
  • 210 g All purpose flour
  • 1 ½ tsp Baking powder
  • 1/3 tsp Baking soda
  • 75 g Butter, softened
  • 75 g Erythritol or white sugar
  • 2 Medium eggs
  • 1/2 tsp Pure vanilla powder
  • 150 g Crème fraîche, at room temperature
  • 120 g Licorice toffee, cut into smaller pieces
  1. Preheat the oven to 190C/375F and line a muffin pan with 8-10 muffin cases.
  2. Whisk together the flour, baking powder and baking soda in a bowl.
  3. Beat the butter and erythritol or sugar together until light in colour. Add the eggs and vanilla powder and whisk together.
  4. Mix half of the flour mixture into the butter mixture, then add crème fraîche, now stir in the remaining flour mixture. Fold in the chopped licorice toffee.
  5. Divide the batter among the muffin cases, then bake for 20-22 minutes until lightly golden and firm to the touch. Allow to cool in the pan.

Licorice is such a strange thing-a-ling indeed. We don't have it in caramel form, only the candy factory Pionir in my city makes licorice hard handy for throat,but they are mostly popular among the old people LOL

What a great and creative use of licorice! I cannot identify myself as a big licorice fan, but I don't mind those toffees that are mild in flavour.
