If you fancy something sweet but don't want to bake a cake, homemade cookies are a great alternative. They are quick to bake, taste delicious and are great for sharing. Simple and delicious with crunchy edges and a slightly soft center, these lavender chocolate cookies will surprise you with an intriguing and unexpected flavour combination. Dark chocolate harmonises perfectly with the slightly floral aroma of dried lavender flowers. A pinch of sea salt rounds off the flavour. Leave the cookies to cool on the tray a few minutes before transfering them to wire rack to cool as the cookies are still very soft fresh from the oven and could otherwise break. If you don’t have fleur de sel, use sea salt flakes.

 
  • 120 g Unsalted butter, softened
  • 100 g Erythritol crystals or white caster sugar
  • 1 Medium egg, at room temperature
  • ½ tsp Pure vanilla powder
  • 200 g Plain flour
  • 1 tsp Baking powder
  • 1 tsp Edible dried lavender flowers
  • 1 pinch Sea salt
  • 100 g Lindt 60% dark chocolate, chopped
  • 1 tsp Fleur de sel for the topping (or other sea salt flakes)
  1. Preheat the oven to 180C/350F and line a baking tray with baking paper.
  2. Beat the softened butter with the erythritol crystals or sugar until fluffy. Add the egg and vanilla and mix everything together well.
  3. In a second bowl, mix the flour with the baking powder, lavender flowers and a pinch of sea salt.
  4. Gradually stir the flour mixture into the butter and sugar mixture and mix until you have a smooth batter. Then fold in the chopped chocolate.
  5. Shape the dough into 12 balls and place them on the prepared baking tray with a little space between them. Flatten the cookie dough balls slightly.
  6. Sprinkle the tops with some fleur de sel and then bake them in the preheated oven for around 12 - 14 minutes until the edges are golden brown. Leave them to cool briefly on the tray and place them on a wire rack to cool completely.
