- Generously season the chicken with salt and pepper. Heat the schmalz or oil in a casserole pan or deep skillet that will fit all the chicken in one layer) over a moderate heat. Add the chicken and garlic and fry, turning, for around 8–10 minutes, until both are golden brown all over.
- Add the white wine, bay leaves and thyme, and cook, stirring often, until the liquid is almost completely cooked away.
- Add the stock or water and cover with a lid. Then cook over a very low heat for around 30–35 minutes, until the chicken is fully cooked through.
- Remove the casserole pan from the heat and rest the chicken for 5 minutes before serving. Eat the garlic cloves, squeezing them out from their casings, with the chicken and juices.

We are debating whether to go full on vegetarian, Angie. No decision yet, although we are more than half way there, but if we do most of your recipes will become irrelevant, unfortunately.
The chicken looks good and tasty, love garlic for remedies sometimes, nice recipe. Thanks Angie.
...we love chicken and this looks great.
This looks amazing. We're having chicken tonight and maybe I'll try this instead of grilling it. Happy Wednesday Angie.
Oy, that is a costly recipe, for some reason garlic has been expensive here for years now, also lemon and tomatoes, weird because they used to be cheap as hell when I was kleine.
Preparo un pollo bastante parecido a este, sin tanto ajo, pero muy bueno también. Me ha encantado este pollo y el nombre que le has puesto es genial.
Wow! That does look and sound amazing.
Yum! That would sure keep the vampires away.

The famous poulet aux 40 gousses d'ail, a delight!

Gracias por la receta.. Te mando un beso.
Yes please, I love garlic so much and this is my kind of dish
Sounds good.
Wow!! That is a lot of garlic. But I love garlic. This dish must be great and delicious. Yours looked beautiful and tasty.
Hi Angie, Great looking chicken dish! Love chicken and garlic with lemon so this is perfect for us. Can't believe that you usually just eat the skin. As for that 'skimpy' uniform, it's really modest compared to the 1980s and 1990s version. Take Care, Big Daddy Dave
I bet it isn't overly garlicy because the garlic is roasted along side of the chicken. It looks like comfort food at its best.
I bet that tastes amazing!

I have to laugh as it was "Chicken with 40 Cloves of Garlic" that put me in the hospital and was the way I found out I was allergic to garlic (and not tomatoes, as they had thought).
