A colourful blend of mixed salad leaves, kumquats, blackberries, chives, toasted pine nuts and a simple lemon maple vinaigrette. Fresh, lightly sweet and a perfect way to enjoy the spring produce. If desired, top salad with some shaved Parmesan or crumbled Feta.

- To make the dressing, whisk together olive oil, lemon juice, pepper flakes, maple syrup, salt and pepper in a jar or bowl. Add in chopped chives.
- Toss the salad leaves with half of the dressing. Top with sliced kuuquats, berries and chives. Sprinkle toasted pine nuts over.

ANgie, around here we call the kumquat quinoto. I prepare them to keep in syrup. Its skin is sweet and its interior is very acidic. I can't imagine the taste of the quinotos next to the Parmesan cheese. We'll have to try.
While I am not a huge fan of fruit in salad, this looks spectacular. I especially like using kumquats, as I fine them so underutilized in so many cuisines.

Hi Angie. I had my first kumquat in Greece. This salad looks fantastic. If I had some kumquats at home I could make one of these for lunch-but sadly, no kumquats for me. :)
