Spicy Chicken Legs with Cashew and Coconut Sauce

A super-easy meal the whole family will enjoy, this spicy chicken and pumpkin traybake is worth adding to your weekday menu. Chicken and pumpkin are a winning dinner combo. They go well together with this cashew nut and coconut sauce in the traybake. Serve with hot steamed rice, crispy fried potatoes, or flatbreads.

 
Spice PasteChicken
  • 50 g Roasted cashew nuts
  • 1 cup Coconut cream
  • 2 tbsp Sambal olek
  • 2 tbsp Tomato paste
  • 2 tbsp Roughly chopped fresh ginger
  • 2 tbsp Coconut sugar
  • 2 tsp Ground cumin
  • 3 Garlic cloves, roughly chopped
  • 180 ml Chicken stock or water
  • 4 Whole chicken legs
  • 2 tsp Ground cumin
  • 2 tsp Ground ginger
  • 1 tsp Ground turmeric
  • 1 tbsp Olive oil
  • 1 Large brown onion, cut into 8 wedges through the root
  • 4 Long red chillies
  • 1 kg Butternut pumpkin, peeled and cut into small wedges
  • Sea salt and ground pepper
  • 2 tbsp Desiccated coconut, toasted (to serve)
  • 50 g Roasted, salted cashew nuts, roughly chopped (to serve)
  • Fresh cilantro (to garnish)
  1. Preheat the oven to 180C/350F. Place all the ingredients, except the water, for the spice paste, in a food processor and blitz until well chopped but not totally smooth. Add the water and pulse to combine.
  2. Season the chicken legs with salt. Combine the spices in a bowl then sprinkle all over the chicken so it is well coated.
  3. Heat the olive oil in a large frying pan over a medium-low heat and brown the chicken on both sides. Take your time doing this so the spices won't burn in the pan. Place on a large baking tray along with the onion, chillies and pumpkin. Season the vegetables with salt and pepper.
  4. Add the spice paste to the pan and cook for 5 minutes, stirring often until fragrant. Season with salt then pour over the chicken and vegetables.
  5. Roast for about 45 minutes or until the chicken is fully cooked. Combine the coconut and cashews and sprinkle over the top, serving the rest separately. Garnish with fresh cilantro.

A wonderful recipe. We have a bottle of Sambal olek in our fridge, but not sure where I can get coconut sugar from. I'll check more thoroughly at the supermarket next time I go there. Thanks Angie, you brighten my cooking days with these delicious dishes.
