Skip the special muffin top pan and bake everyone’s favorite part of the muffin directly on a lined baking sheet. Filled with sweet juicy mango and topped with an easy streusel topping, these matcha mango muffin tops are easy to make and perfect for breakfast or afternoon treat.

- Whisk together the spelt flour, matcha powder, baking powder, baking soda, and salt in a bowl and and set aside.
- Cream together the softened butter, raw sugar and vanilla extract using a hand mixer. Add the eggs, one at a time, beating until fully incorporated before adding the next one.
- Add 1/3 of the flour mixture to the bowl with the butter mixture and beat on low until just combined. Add half of the creme fraiche and beat on low until just combined. Repeat, alternating the remaining flour mixture and creme fraiche, scraping the bowl between each addition. Some dry bits remaining are okay. Do not overmix the batter.
- Gently fold the diced mango into the batter until combined and evenly distributed. Again, don't over mix the batter. Cover the bowl with plastic wrap and allow the batter to rest in the fridge for 15 minutes.
- While the batter rests, make the streusel by mixing together the flour, rolled oats and brown sugar in a bowl. Add in butter and work mixture together with fingertips until pea-sized clumps form.
- Preheat the oven to 200C/400F. Line a large tray with baking paper.
- Using an ice cream scoop, scoop out 10 portions of batter onto the prepared baking tray. Flatten mounds slightly. Divide streusel evenly among muffin tops.
- Bake for 18-20 minutes until lightly golden and allow to cool on the baking sheet for 15 minutes.

A very unusual but intriguing match of aromas! I have not eaten mangos in years they are too expensive here, sadly. I am currently buying, dicing and freezing pumpkins for winter and also celery leaves before the first frost arrives.

They remind me of scones, "my scones" which turn out flatter than the average scone, but these look and must taste yummy tasting of Mango.
