Apricot Gazpacho

Raw, healthy, low calorie and gluten free! This easy vegetarian soup recipe is perfect for a refreshing summer lunch and a great way to use up ripe apricots (or peaches, cherries, watermelon, and strawberries). Use less water if you prefer a thicker soup. Serve with some crispy spiced peas for the crunch or just a couple of slices of apricots. Feta would be another good choice to use as a topping.

 
  • 500 g Apricots, halved, pitted
  • 300 g Tomatoes, quartered
  • 100 g Celery stalk
  • 1 Orange bell pepper, chopped
  • 1 Red onion, quartered
  • 1 Garlic clove
  • 4 Thyme sprigs, leaves plucked off (plus extra to garnish)
  • 200 ml Spring water (or vegetable stock)
  • 4 tbsp White balsamic vinegar
  • Salt and pepper to taste
  • Chilli flakes, to garnish (optional)
  • Paprika spiced peas, to garnish (optional)
  1. Toss all the ingredients into a blender and blend until smooth. Cover and refrigerate for approx. 1 hour.
  2. When you are ready to serve it, stir the gazpacho well, ladle into bowls and garnish with chilli flakes, thyme leaves and extra apricot slices or paprika spiced peas if desired.

This is a beautiful summer soup,,different from the gazpacho I have made in the past. I currently have some peaches that are a tiny bit pithy and this could be the perfect answer to using them.

It is something I would defo not like, mixture of tomatoes and apricots actually scares me deeply LOL but we did not have a lot of apricots this year, sadly, due to the strange weather. I was watching THE DAY AFTER TOMORROW a few days ago and it is funny how everything that happened in that catastrophe movie is happening right now to us, from massive ice falling from the skies, to tornadoes and twisters and then temp drops like these we have now, it was 11 degrees here last night LOL

Angie, This is an interesting version of gazpacho, that's for sure. My problem is that I've never understood 'cold' soup... For the same reason, I've never appreciated potato salad or cold potatoes in any format. Maybe I'm just a bit weird. My wife would agree with that! Take Care, Big Daddy Dave

Terrific! I love Gazpacho and sweet and savoury spins on it, but I've only tried strawberry, cherry, and watermelon variations. With apricots, it sounds like something I should make ASAP!

Perfect for the hot dry summer we are experiencing right now! The feta topping would have been great as salty briny flavors to the apricot gazpacho which I am guessing has more sweet notes.
