This is truly a superfood salad filled with savoury and fruity ingredients that are both healthy and tasty. The bitter substance lactucopicrin from radicchio stimulates the production of digestive juices in the stomach, liver and pancreas. King of all the cheese - real, authentic Parmigiano Reggiano is rich in vitamin B12, calcium, zinc, and other antioxidants and minerals that your body loves. Walnuts are rich in heart-healthy fats and high in antioxidants. Packed with antioxidants and phytoflavinoids, blueberries are also high in potassium and vitamin C. Not only can they lower your risk of heart disease and cancer, they are also anti-inflammatory.

- Add all the ingredients for the dressing into a small bowl or glass jar and whisk until combined. Alternatively you can add all of the ingredients into a mason jar and shake until combined.
- Place radicchio leaves in a serving platter. Top with blueberries, Parmigiano-Reggiano cheese and parsley. Crush some toasted walnuts over and drizzle with red wine dressing to serve.

Well that is looking nice.
lovely photos angie. This sounds really good for you!
El único cambio que yo haría sería la achicoria por lechuga, más que nada por costumbre, lo demás es perfecto. En casa se consumen cantidad de ensaladas durante todo el año.
Un beso.
So refreshing to look at. organic and healthy
wow che buono!
...Angie, you come up with such colorful and interesting dishes.
That is one colourful salad.
Not something I would like, but it looks very Italian indeed! I think keto is dangerous.
I didn't know the words "Radicchio Salad," but love Blueberries

What a beautiful and colourful salad. I’ve never been a fan of radicchio because of its bitter taste but I just love the ingredients of the dressing! I need to find some walnut oil.

I loved the sweet, sour spiced dressing mix in the radicchio salad, refreshing one !!
I bet this is a really fresh tasting salad with the combination of those blueberries and parmesan together. Yum!
The bold red of radicchio stands out in this salad, so apt for autumn!
I'm not very good with bitters, but this salad looks so fresh and colourful that I think I'd enjoy it. Especially knowing how healthy it is.

Angie, When I saw your radicchio salad and how appealing it is, I had a glimmer of hope since I can't eat greens because of Vitamin K. I was sad to see that radicchio is high in Vitamin K... Take Care, Big Daddy Dave
A beautiful looking salad, Angie.
Great combination of flavors & textures.
It's Judee. Love the colors of this beautiful salad and the interesting flavors too.
