These delicious lemon garlic butter chicken thighs are packed with flavours, keto friendly, and not only it is easy to make and it will come together in no time, making it the perfect dish to serve any weekday. Serve alongside your favorite vegetables or seasonal salad or over pasta, mashed potatoes, and rice if you are not doing low-carb. You can also serve this with some crusty bread to soak up all that amazing lemon garlic butter sauce.

  • 7 Garlic cloves
  • 4 tbsp Butter, melted
  • 3 tbsp Freshly squeezed lemon juice
  • 2 tbsp Ghee
  • 6 Skin-on, bone-in chicken thighs
  • Salt and ground black pepper to taste
  • 1/2 Lemon, thinly sliced
  • 2 tbsp Fresh parsley, chopped
  • Lemon wedges
  1. Preheat the oven to 190C/375F. Mince one garlic clove. Smash the remaining 6 garlic cloves with the side of a chef's knife.
  2. Melt the butter in a microwave-safe bowl and heat in a microwave oven until melted, 1 minute. Stir in lemon juice, minced and smashed garlic cloves. Set aside.
  3. Pat chicken thighs dry with a paper towel. Generously season chicken thighs with salt and pepper.
  4. Heat ghee in a large oven-safe skillet over medium-high heat. Cook chicken thighs, skin-side down, for 5 to 7 minutes or until golden brown and crispy. Flip chicken over and brush the skin with lemon-garlic-butter mixture. Pour remaining butter mixture and lemon slices into skillet.
  5. Transfer the whole skillet to the oven and bake until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 74C/165F. Brush skin every 10 minutes with pan juice.
  6. Remove skillet from the oven and place chicken on a serving platter. Drizzle chicken with pan juices and garnish with parsley and lemon wedges.

Looks very good, Angie! Question for you: When you publish a post, does it show up in the blog feed for you? Mine is not and yours didn't show up until now. Mine took over two hours to finally show up in the feed. Wondering if you're having that same issue.

Whoop whoop! Looks delicious. I like the quote by Jim Davi (about vegetables being a "must on a diet)" Therefore, I can just picture this dish being accompanied by a piece of pumpkin pie!

No sé muy bien en qué consiste la dieta cetogénica, pero sí que me gustan mucho esos muslos, la elaboración es sencilla y el resultado buenísimo.
Un beso.

@Chef MimiIt's called lemon garlic butter chicken :-) But of course you can fry the chicken with olive oil if desired. I prefer to cook with ghee and animal fat.

Lemon, garlic, butter, salt, and pepper is a simple yet heavenly combination that always stands out! And the chicken cooked to perfection, too.

Love garlic butter and lemon flavours but have never thought of combining the two flavours together. Definitely a combination I shall be trying, although I would probably use chicken breasts. as that is the only cut we tend to eat, not keen on bone in, or skin on, joints! Thanks for the great idea of serving with crusty bread too, can't waste any of that delicious juice :)
