The sweet chestnut has a high starch content - similar to potatoes. This ensures a sweet aroma and a particularly creamy consistency. The soup becomes naturally creamy, so to speak. And, by the way, it is also gluten-free and dairy free. The beauty of this soup is that it's quick and easy to make. You can safely use vacuum-packed chestnuts or those from the jar. They are already pre-cooked and peeled. The pear just adds a fresh, slightly fruity note. And goes perfectly with the nutty-sweet taste of the chestnuts.

- Cut the cooked chestnuts in half. Peel and dice the onions. Peel and core the pears and cut into cubes.
- Heat the olive oil in a medium saucepan and fry the onions briefly. Add the chestnuts and pears and fry for another 3-5 minutes. Deglaze with vegetable broth and simmer the soup over medium heat for 30 minutes.
- Finely puree the chestnut soup with a stick blender. Season to taste with salt, pepper, cayenne pepper and nutmeg. Finely chop the parsley leaves.
- Sprinkle the soup with parsley before serving. If desired, refine the soup with a blob of crème fraîche.

I have never had chestnuts either, but I did see a local u-pick farm is advertising them. I have no idea if they would be sweet or not, but I could look for a canned version in some of the speciality grocers nearby

very difficult to get chestnuts here! sometimes you see them in winter in the supermarkets vacuum-packed but not often. Love your mugs!
