I bet that you've never had a caprese salad like this before! Grab two oxheart tomatoes, cut them into thirds horizontally and create your own Caprese burger with creamy herb burrata - a fun twist on the classic Italian salad. It's gluten-free and keto-friendly.
Oxheart is an old heirloom from the 1920's. It is an extra large, heart shaped (or cone-shaped) tomato that is usually pinkish red (there are many other varieties; the one I use for the recipe is called Coeur de Boeuf), firm and meaty with fewer seeds and a mild sweet tomato flavour. If you can't find them, use beefsteak tomatoes instead.

 
  • 2 Oxheart tomatoes / Coeur de Boeuf (or beefsteak tomatoes)
  • 1 clove Garlic, peeled and finely chopped
  • Salt and pepper
  • 1 Red onion
  • 1/2 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 15 g Basil
  • 2 Burrata balls, drained
  • 1 Small avocado
  • 1/2 Lemon
  • 1 tbp Extra-virgin olive oil
  1. Cut the oxheart tomatoes into thirds horizontally. Finely dice the middle part. Peel and finely dice the garlic and mix with the diced tomato. Season with salt and pepper.
  2. Peel the onion, cut into rings. Heat a small skillet to medium high heat. Add olive oil and onion rings to the skillet. Saute until onions are slightly brown, 5-8 minutes. Season with salt and pepper. Deglaze with balsamic vinegar. Stir and saute for another 2-3 minutes until vinegar has soaked into onions. Remove from heat and set aside.
  3. Wash the basil, pat them dry and finely chop 1/3 of basil leaves. Roll the burrata in the chopped basil.
  4. Halve the avocado, remove the pit, remove the flesh from the skin and cut into thin slices. Sprinkle the slices with lemon juice and season with salt and pepper.
  5. Season the tomato halves with salt and pepper. Cover the lower part of tomato slices with avocado and some basil leaves. Place the burrata on top and cover with onions, diced tomatoes and drizzle with olive oil. Cover with the tomato top and secure with a wood skewer.

Nunca se me hubiera ocurrido montar una hamburguesa semejante, pero ahora que la veo pienso que es una idea excelente. En casa nunca faltan tomates, aunque esta variedad no la he comprado, me parecía demasiado grande para una ensalada, ahora sé una forma de consumirlos muy rica. Gracias.
