Simple and delicious with crunchy edges and a slightly soft center, these lavender chocolate cookies will surprise you with an intriguing and unexpected flavour combination. Dark chocolate harmonises perfectly with the slightly floral aroma of dried lavender flowers. A pinch of sea salt rounds off the flavour. Leave the cookies to cool on the tray a few minutes before transfering them to wire rack to cool as the cookies are still very soft fresh from the oven and could otherwise break. If you don’t have fleur de sel, use sea salt flakes.

I used a springform pan to make a huge baked pancake, but you can make the regular one in a skillet. Besides smoked salmon, you can also serve the pancakes with poached eggs, or some stirfried chicken.

Ready for the fluffiest egg ever? Then switch on the oven, get the Parmesan and eggs out of the fridge and let’s make some fluffy egg clouds for breakfast or brunch! The egg whites must be whipped until stiff peaks have formed before folding in chives and Parmesan. They are then formed into 4 clouds and baked in the oven for 4 minutes before sliding the egg yolk into the well in the center and bake for a further 2-4 minutes, depending on how brown you like them.

I used mashed roasted pumpkin, so it’s probably drier than the canned one. Adjust the liquid if necessary. Bold, sharp vintage Cheddar provides a nice contrast to the sweet creamy pumpkin, but you can use other aged cheese too.
