Roasted Mojito Chicken

Roasted Mojito chicken is a vibrant, zesty, Caribbean-inspired dish that marinates chicken in a refreshing marinade of rum, lime, and fresh mint, as well as some olive oil, shallot and spices. I used bone-in, skin-on chicken thighs but use whatever you like. Adjust the cooking time accordingly. You could also grill the chicken if you like.

 
Mint Gremolata
  • 7-9 Chicken thighs, bone-in, skin-on (1.2kg)
  • 3 tbsp Mint leaves, finely chopped
  • 3 tbsp White rum (I used Bacardi white)
  • 2 Shallots, chopped
  • 3 Garlic cloves, minced
  • Finely grated zest and juice of 2 limes
  • 1½ tsp Fine sea salt
  • 2 tbsp Olive oil
  • 1 tsp Chipotle chilli flakes (optional)
  • 2 Limes
  • 3 tbsp Mint leaves, finely chopped
  • 2 Garlic cloves, minced
  1. Spread the chicken pieces in a baking dish. Combine all the marinade ingredients and pour over the chicken thighs. Rub each chicken thighs with the marinade really well, lifting skin and getting the marinade underneath. Set aside in the fridge to marinate for at least 2 hours, or overnight if you have time.
  2. Remove the chicken from the fridge while you preheat the oven to 200C/400F. Roast chicken for about 45 minutes. Switch to grill function, and grill for 5-8 minutes until golden and crispy.
  3. For mint gremolata, zest the limesinto a small bowl and mix in the mint and garlic. Chop the zested limes into wedges. Serve the chicken with mint gremolata and lime wedges.
