Sourdough Spelt Ring
Sunday, November 27, 2022A delicious, airy sourdough bread with open crumb made from 100% spelt, which makes this bread extra delicious with its nutty, complex flavour and keeps you fuller for longer, and help maintain steady blood sugar levels. This 100% spelt bread recipe is leavened with sourdough starter with NO commercial yeast added. It has a crusty exterior and a soft, tender and moist center. Exactly what you look for in artisan bread. When you shape the bread, do not apply too much pressure as you want to retain the gas pockets (don't punch the dough down like you do with regular bread dough), but still build the adequate tension and structure in the dough.
Pan Seared Salmon with Tahini and Herbs
Friday, November 25, 2022Salmon fillets are coated in a creamy tahini yoghurt and adorned with fresh and flavourful herb-nut-sumac mix in this dish that is sensational for any dinner party. I prepared the salmon in a grill pan, but you can bake them at 150C/300F for 10 minutes or until cooked to your liking. If preferred, it can be made using a whole side of salmon or even ocean trout fillets.
Snow Pea Salad with Goat Cheese Dressing
Tuesday, November 22, 2022This vibrant and flavuorful salad is pretty straightforward to make - trim and blanch the snow peas until al dente. Drain and refresh in cold water. Toss with a tangy, creamy, and extremely addictive goat cheese dressing. You can use sugar snap peas instead or a mixture of two. Not a fan of bacon? Use nuts or extra goat cheese as the topping.
Chestnut Pear Soup
Saturday, November 19, 2022The sweet chestnut has a high starch content - similar to potatoes. This ensures a sweet aroma and a particularly creamy consistency. The soup becomes naturally creamy, so to speak. And, by the way, it is also gluten-free and dairy free. The beauty of this soup is that it's quick and easy to make. You can safely use vacuum-packed chestnuts or those from the jar. They are already pre-cooked and peeled. The pear just adds a fresh, slightly fruity note. And goes perfectly with the nutty-sweet taste of the chestnuts.
Keto Avocado Pancakes
Thursday, November 17, 2022Simple and speedy to prepare, these fluffy, naturally gluten-free pancakes don't need any flour. Instead, the almonds and avocado add a good combination of flavours. The result is a tender, savoury pancake, perfect for serving up for a weekend breakfast in bed. You can add a sunny side-up egg or/and a couple of rashers of streaky bacon. Or simply drizzle the pancakes with some monkfruit sweetened syrup for a keto-friendly meal. Packed with protein and healthy fat, this is a great way to kick start your day.
Seedy Oatbread - Gluten, Dairy, Sugar & Egg Free
Tuesday, November 15, 2022Bread without wheat flour are very popular right now. Instead of wheat flour, this oat bread contains many seeds, nuts and of course oat flakes. The nuts and seeds are held together here by the crashed linseeds, psyllium husks and water. (That is why the resting time is particularly important for the flourless bread.) This gives the bread a firm consistency and makes the bread particularly crunchy. This delicious seedy bread is super filling and contains lots of healthy ingredients and is bursting with fibre, protein, healthy fats and minerals. It is easy and can be prepared in no time at all. Be sure to try it out! It's gluten, dairy, sugar and egg free - an ideal bread alternative for those who have sensitive tummies or simply want to eat consciously. If desired, flavour the dough with some turmeric, fennel, and careway seeds. For a richer version, replace 50 ml of water with coconut oil.
Oats are full of goodness and provide our bodies with a lot of good nutrients, minerals, fibre and trace elements. In addition, oats can help lower blood sugar levels and prevent you from the dreaded sugar cravings. Rye or barley flakes can be used instead.
Radicchio Salad with Blueberries and Parmesan
Sunday, November 13, 2022This is truly a superfood salad filled with savoury and fruity ingredients that are both healthy and tasty. The bitter substance lactucopicrin from radicchio stimulates the production of digestive juices in the stomach, liver and pancreas. King of all the cheese - real, authentic Parmigiano Reggiano is rich in vitamin B12, calcium, zinc, and other antioxidants and minerals that your body loves. Walnuts are rich in heart-healthy fats and high in antioxidants. Packed with antioxidants and phytoflavinoids, blueberries are also high in potassium and vitamin C. Not only can they lower your risk of heart disease and cancer, they are also anti-inflammatory.

Monday, November 07, 2022Oven Roasted Chestnuts and Puree
Thursday, November 03, 2022Select chestnuts that are heavy for their size with tight, shiny shells. Dull and very light chestnuts may be older and already somewhat dried out. Holes in the shell indicate a worm infestation. If you are not sure, you can put the chestnuts in warm water. If the nuts are fresh, they will sink to the bottom.
The chestnuts develop their nutty-sweet aroma when roasted. Enjoy them plain or with some salt and butter. The chestnut puree is delicious either warm or cold. You can spread it on bread or serve it as a hearty dip with vegetable sticks as a snack or starter! The shell is best removed when the chestnuts are still hot. Make sure that the brown, furry skin is also removed.
Creamy Quince and Parsnip Soup
Monday, October 31, 2022This fruity and delicious soup will protect you perfectly during the cold season, as quince provides plenty of immune-boosting vitamin C and contains tannins and tartaric acid, which have antiviral and antibacterial effects. Along with vitamin C, parsnips are rich in potassium, a mineral that helps your heart function, balances your blood pressure, and lowers your risk for kidney stones. It's economical, easy to throw together with a few ingredients and incredibly versatile. Besides parsnip, you can also use pumpkin, root celery, carrot or sweet potato to make the soup.
