Another classic and traditional dish made with a blind-baked keto-macadamia crust and sage roasted butternut squash. Nestled in a creamy rich egg mixture and topped with briny feta and crunchy pine nuts, this butternut squash dish is a great every day low-carb meal. If you have some leftover roasted pumpkins on hand, this would be a perfect recipe to use them up. Use a regular crust instead if low carb diet ain't your thing or leave it out completely and bake the quiche in a casserole dish.

I often make this colourful summer squash casseole during summer months when they are in peak season or when I am looking for something healthy, flavourful and delicious for the family.
This classic summer meal couldn't be easier to prepare. Start by slicing the zucchini and tomatoes (about 1/4-inch thick) and place them in a baking dish. Prepare a Parmesan cheese and pork rind topping (use regular breadcrumbs if you ain't on keto) to scatter over the vegetables. Bake the casserole in oven until the crumb topping is golden and crispy. Enjoy!

This flavoursome terrine is surprisingly simple to put together and perfect for a make-ahead starter when you're entertaining a crowd, light lunch or picnics. It can be made up to three days ahead, then just slice and serve with an assortment of crackers or crusty bread, cornichons and a herb dip or a relish.

Pork rinds are one of the most keto friendly snacks you can find and the ideal ingredient to use for keto bread since they contain naturally ZERO carbs. In this dairy-free, gluten-free 2-ingredient bread recipe, you basically just need ground pork rinds and egg whites (I used duck egg whites). Spices and herbs are completely optional. The texture of this keto bread roll is soft, tender and spongy with a crunchy crust. They toast well and hold perfectly firm for patties, pulled beef/chicken/pork or simply spreading butter, (black garlic) mayonnaise and liver parfait. Ground pork rind can be used as a panko substitute too.

This is a delicious and fun breakfast or lunch recipe with eggs and sausages. It's very much like Egg in a Hole - an egg fried in a hole in a slice of bread, but here we use sausage instead of bread. Sprinkle the top with cheese and seasoning of your choice and cook the egg to your liking.

Crispy Pig Ears with Chilli Sauce

Evenly thin sliced strips of pig ears are first slow cooked in a pot water with garlic, peppercorns and herb, then fried in ghee until crispy and served with chilli sauce. Don’t fear the pigs' ear. People all over the world eat them and they are considered a delicacy in some parts of the world. It’s putting the whole pig to good use and more sustainable, less wasteful and they are less expensive too. In China, pig's ears are braised with innards and served as an appetizer. In Japen, they are pickled or sauteed with vegetables. Europeans also like pig ears boiled, stewed, smoked or roasted. The crunchy cartilage along with the chewy gelatinous skin and meat...you really have to try it to know the taste.
Pig ears contain lots of collagen, so they must be cooked low and slow. Cover the pig ears in water and cook until tender (2.5-3 hours) before frying them.

Ready in 20 minutes, this colourful arugula salad with ruby red grapefruit, edamame (green soya beans), avocadao, Prosciutto and toasted pecans is all you need to be eating a healthy, nourishing salad for dinner tonight. Edamame are soya beans that are harvested and picked when the fuzzy pods are tender and green. They are naturally gluten-free and add a protein boost to your food. Simple, slightly tangy salads work so well with prosciutto. This fresh shaved fennel, prosciutto crudo, hazelnuts, and Parmesan salad recipe is great served for a light yet satisfying lunch or light side dish. Substitute the shaved fennel with celery, arugula or Brussel sprouts if you don't like anise or licorice flavour in fennel.
Blanched hazelnuts are shelled hazelnuts that are blanched in boiling water to remove the skin. Use other nuts (walnuts or almonds) if you like.
Kiwiberries (aka cocktail kiwi and grape kiwi) are like mini kiwifruit with smooth green skin. This grape-sized fruit, native to China and Korea, similar to kiwifruit in taste and appearance and are rich in vitamins C and E and naturally low in fat, cholesterol and sodium. They’re also an excellent source of fiber, magnesium and potassium.
