A delicious late summer tart made with a melt-in-mouth buttery spelt-pepita crust, filled with a mildly nutty pepita frangipane cream and topped with a mixture of mirabelles and ederberries (or any fruit you have on hand).
Mirabelle is another delectable European heirloom plum. Small round yellow fruit with yellow red dots. They’re the smallest of the more than 2,000 plum varieties found worldwide, weighing only about 10 g each. The ripe mirabelle plums are delicately aromatic, juicy, sweet, low in calories and rich in vitamins. The mirabelle was probably named after plums grown in Southern France where they were cultivated under the name of mirabel, which means look (mira) and, of course beautiful. Mirabelle plums are very good for compote, jam or cakes and tarts.
Elderberry is dark purple fruit from the elderberry shrub. It's a rich source of antioxidants and vitamins. It has long been used in traditional medicine and appears to have some medicinal benefits. According to Webmd, elderberries could help tame inflammation, lessen stress, and help protect your heart, too. Some experts recommend elderberry to help prevent and ease cold and flu symptoms. Raw and unripe elderberries contain a poison called cyanide. So they should always be cooked before they're consumed.

This decadent, luscious no-bake chocolate tart tastes as good as it looks, yet couldn't be easier to make. For the crust, I use a simple mixture of all-butter spiced cookies and butter- a combination that you can never go wrong with. You can even vary the type of cookie crust you make by changing out speculoos cookies for other types of cookies. Try shortbread cookies, Oreo cookies or simple sugar cookie.
The crust is filled with a lusciously rich chocolate ganache and toasted hazelnuts, then topped off with specks of edible gold leaf and dried rose petals. An easy yet sophisticated dessert! The chocolate tart will keep for up to a week in the fridge.

Cookie CrustFilling & Assembly
  • 200 g Butter speculoos cookies (or gingersnap cookies)
  • 100 g Butter
  • 50 g Hazelnuts, toasted
  • 120 g 65-70% Dark chocolate (or bittersweet chocolate), coarsely chopped
  • 200 g Milk chocolate, coarsely chopped
  • 200 g Heavy cream
  • 40 g Butter, cut into small pieces
  1. Crush the biscuits by putting them in a large, strong, plastic food bag and bashing with a rolling pin. Melt the butter, then stir in the cookies. Press onto the base and up the sides of a 22cm-24cm tart pan with a removable bottom, making sure the edges and the bottom are compact and of even thickness. Chill for an hour to firm up before adding the filling. Or just make the crust a day or two before.
  2. Preheat oven to 180C/350F. In a baking pan add hazelnuts in one layer and toast in middle of oven for 15 minutes, or until lightly colored and skins are blistered. Wrap nuts in a kitchen towel and let steam 1 minute. Rub nuts in towel to remove loose skins and cool completely.
  3. In a medium bowl, add chopped dark and milk chocolate. Set aside. In a small saucepan over medium-low heat, bring the heavy cream and butter to a gentle simmer. Remove from the heat and pour mixture over the chocolate. Let stand for 1 minute and stir until melted and smooth.
  4. Add the toasted hazelnuts to the crust and pour mixture over chilled cookie crust and chill until set, at least 4 hours or overnight.

Nothing says true love like a homemade dessert :-))This pastry heart makes the best dessert for someone special. It's basically just some twisted puff pastry straws rearranged in a heart-shaped baking pan. Perfect for pre-dinner nibbles or as the dessert and for when you are short on time because it's so quick and easy to make. It's beautiful and amazing enough for a special occasion like Valentine's or a birthday party while simple enough for an easy weekend treat.

To Garnish
  • 1 package / 250 g Poppy paste ( I used Dr. Oetker)
  • 80 g Chopped hazelnuts
  • 1 Large egg, lightly beaten together (reserved 1 tbsp for the topping)
  • 1 sheet / 275 g Fresh puff pastry
  • 1/2 tsp Sesame seeds
  • Pink peppercorns
  • Rose petals
  • Rosemary
  1. In a medium bowl, mix together the poppy paste, all egg except 1 tablespoon for the topping and chopped hazelnuts. Set aside.
  2. Preheat the oven to 200C/400F. Lightly grease a 24-cm heart-shaped baking pan or line with a baking paper.
  3. Unfold the pastry sheet and spread the poppy mixture evenly on the pastry. From the short end fold over and cut the folded pastry into 1cm strips.
  4. Twist the strips and arrange them, from inside to outside, into the prepared form. Brush with the reserved egg and sprinkle with sesame seeds.
  5. Bake in the middle of the hot oven for 20 minutes until golden brown. Let the pastry cool on the baking sheet on a wire rack for 10 minutes. Garnish with pink peppercorns, rose petals and rosemary.

Made with plain wheat flour, fresh homeamde butternut squash puree, and crisp fried onion, these simple tasty pumpkin scones are best served with butter, sour cream or chutney over a pot of tea. They are the perfect addition to every fall and holiday table and might be the best way to celebrate pumpkin season.

  • 400 g Plain flour, sifted
  • 15 g Baking powder
  • 1/4 tsp Baking soda
  • 1 tsp Sea salt
  • 125 g Butter, chopped, at room temperature
  • 220 g Pumpkin puree, cooled
  • 80 ml Buttermilk, plus extra to glaze
  • 2 tbsp Maple syrup
  • 1 Small egg, lightly beaten
  • 1 tsp Dried thyme
  • 100 g Crisp fried onions
  • Herb sour cream to serve
  1. Preheat oven to 220C/430F. Line two oven trays with parchment paper. Sift flour, baking powder, baking soda and salt into a large bowl. Rub in butter lightly using fingertips, until mixture resembles breadcrumbs.
  2. Make a well in centre. Add pumpkin puree, buttermilk, maple syrup, egg, dried thyme and fried onions.
  3. Using a bread and butter knife, mix quickly to a soft, sticky dough. Do not over-mix. Turn onto a floured surface. Knead lightly. Press out to form a round about 2cm thick and cut into 10-12 rounds or your desired size and shape.
  4. Place them on the prepared trays. Brush with extra buttermilk. Bake 20-22 minutes or until scones sound hollow when tapped. Cool on a wire rack. Serve with herb sour cream or your favourite chutney.

Haselnusshörnchen Hazelnut Crescents with Spelt and Potato

Tuesday, September 21, 2021

This German-style nut pastry (Haselnusshörnchen) can be found in almost every bakery in Germany. It's very easy to make this at home and the result is just as delicious. You can use either hazelnut or almond, or a combination of two. They are fantastic to serve at the breakfast or in the afternoon with a pot of freshly brewed coffee. I have found the recipe in a local weekly magazine (Neue Post) and just tweaked a bit based on our taste and pantry stock.

DoughFilling
  • 300 g Potatoes
  • 60 g Butter
  • 100 g Sugar
  • 2 Eggs, medium
  • 400 g White spelt flour
  • 15 g Baking powder
  • 135 g Ground hazelnut
  • 45 g Coconut sugar
  • 5 tbsp Coconut milk
  • 1 tsp Vanilla
  • Icing sugar, to dust
  1. Cover the potatoes with water in a saucepan. Bring the water to a boil. Reduce heat to medium low. Cover the pot with a lid and let simmer until fork-tender, about 25 minutes. Drain potatoes and cool to room-temperature. Chill the potatoes overnight. Peel and weigh 250 grams for the recipe.
  2. Whisk together the spelt flour and baking powder together. Use a potato press to press the potato into the flour mixture.
  3. Beat butter and sugar until light and fluffy. Beat in eggs, one by one, until combined. Add in flour-potato mixture. Mix until you have a firm and smooth dough. Cover and chill for 30 minutes.
  4. Mix ground hazelnuts, coconut sugar, coconut milk and vanilla together until you have a thick paste. Preheat oven to 200C/400F. Grease and line two baking trays with baking paper. Roll out the dough into a 40cm circle. Spread the prepared hazelnut paste evenly on the circle. Cut the circle into 12 triangles/wedges. Roll up each triangle from the wide end to form a crescent.
  5. Place them on the prepared baking trays. Bake in the middle of hot oven for about 30 minutes until lightly golden brown. Dust with icing sugar and serve.
