These parsnip chips make a great alternative to storebought potato chips and dip, and are irresistible with a sprinkling of chilli salt and homemade tzatziki sauce. Best eaten on the day they are made, as they can lose their crispiness. If you don't want to fry them, then toss the ribbons with 1 tablespoon of olive oil and bake at 180C/350F for 20-25 minutes. You might have to do this in a few batches.

Braised Fennel

A simple but oh-so-yummy dish. Fennel wedges braised in white wine and stock until tender which really develops mild licorice flavours, then garnished with a mixture with Parmesan, parsley, lemon zest and toasted Brazil nuts for extra crunch and flavour. It’s a perfect accompaniment to roasted chicken, fish, sausages, steak or over a bed of hummus if you are a vegetarian. Make this recipe your own by adding capers, olives, fruit, or tomatoes togehter with wine and stock. Instead of Brazil nuts, you can also use hazelnuts, almonds or pine nuts for the topping.

A classic fish and leek bake with zander fish fillets, creamy leek and topped with a crunchy Provencal style crust, which can be used to top chicken, lamb and vegetables too. Traditionally, this crust is made with breadcrumbs and cheese, but using ground pork rind is another great alternative if you are on a low-carb or keto way of eating, plus it adds texture and flavour. It's perfect for a make-ahead meal. Just assemble the entire gratin in advance and store it in the refrigerator until you’re ready to pop it in the oven.

Oxtail Stew

A wonderfully rich, savory, and comforting slow-cooked, well-seasoned oxtail paired with brandy tomato sauce makes a cozy and warming winter meal and an ideal energy source for a Ketogenic, Carnivore, or Ketovore ways of eating. Oxtails contain a ton of collagen and benefits from long, slow cooking (at least 3 hours), but will reward you with a deep, hearty and flavourful winter stew.
After browning the oxtails in an ovenproof skillet, there's little else to do than let them simmer in the oven with tomatoes, celery, spices, stock and brandy for about 4 hours until fork tender. So be patient. Use less stock or reduce the sauce longer if you prefer a thicker stew.

Crispy, tender baby leaves are gently tossed with chicken schmaltz roasted Hokkaido pumpkin wedges and aromatic toasted cashew nuts in this colourful and pretty salad. The lemon-and-herb vinaigrette gets a touch of sweetness from a teaspoon of honey and works beautifully with almost any salad. I used a mixture of flat parsley, oregano and thyme. If you can't find red chard and bull's blood, just use baby arugula, lamb's lettuce or young spinach instead.

Whet the appetite for the dinner party by serving your guests this rich pork terrine with Italian sausages, pistachio kernels and green peppercorns. It can be made up to two days ahead. I use spicy Italian sausages, but you can use regular one or any pork sausage of your choice. If you want to make it alcohol-free, replace it with apple juice or chicken stock. A terrine is always better served at room temperature or cold with crusty bread / crackers, pickles, mustard and fruit chutney or simply with a salad.

This easy keto quiche recipe starts with a pork rind crust, but you can use a regular quiche crust if you ain't on keto or low carbs diet. It’s loaded with roasted pork belly, 3 different kinds of cheese (Spanish Manchego, Dutch Old Amsterdam, and English vintage Cheddar) and spring onions and is perfect for brunch or dinner! You can use other cheese (Cheddar, Gouda and Gorgonzola), add other seasonings and replace pork belly with leftover roasted chicken or ham.

Grilling radicchio helps temper the bitterness in this hearty and beautiful vegetable. Radicchio and fresh goat cheese pair well and compliment each other. Candied walnuts and juicy pomegranate seeds give a distinctive lift and touch of sweetness to this warm salad. It is simple and quick to prepare and makes an impressive and exciting side dish that will liven up any meal.

This Pumpkin Walnut Pâtés is delicious, vegetarian-friendly and perfect for dipping into with slices of crusty bread, crackers, grissini or vegetable sticks. You can serve this as an appetizer for any of your holiday parties. I used homemade roasted hokkaido for this, but butternut squash or even canned pumpkin will work just as fine. It keeps well in the refrigerator for up to 4 days.
