This quick and flavourful chicken recipe is truly a crowd pleasers. For a richer flavour, bone-in, skin-on chicken thighs, drumsticks or whole legs are the perfect choice for the recipe. However, the real star of this dish is that creamy cheesy Comté sauce, which is enriched with double cream, and homemade chicken broth, and distinct Comté offers a rich, robust flavour and complex textures to boot. Serve with your favourite crusty bread or pasta to mop up the luscious sauce.
Comté cheese comes from the Jura mountains in France. Its deep nutty flavour with sweet and fruity undertone is the perfect balance to the richness of chicken and caramelized onions.

Comté Chicken

adapted from GBC
  • 800 g Chicken drumsticks or thighs
  • Sea salt and black pepper
  • 2-3 tbsp Chicken schmaltz or oil
  • 1 Onion, diced
  • 3 Garlic cloves, sliced
  • 200 ml White wine
  • 500 ml Chicken stock
  • 150 ml Double cream
  • 100 g Comté cheese
    ©angiesrecipes
    , cubed
  • 1 dash of white wine vinegar
  • Parsley leaves, chopped
  1. Season the chicken with salt and pepper. Heat chicken schmaltz or oil to a pan over medium-high heat. Add the chicken and sear until they have gained a nice dark golden colour. Remove the chicken from the pan and set aside.
  2. Lower the heat to medium and add the onion and garlic with a pinch of salt and sweat down until soft. Turn up the heat and add the white wine. Use a wooden spoon to scrape the bottom of the pan, releasing the tasty brown bits which will add flavour to the sauce.
  3. Return the chicken to the pan and allow the wine to reduce by two-thirds. Add the chicken stock and leave to simmer and reduce by two-thirds.
  4. Add the cream and reduce once more into a nice thick sauce. By this point the chicken should have had been cooking for around 20 minutes. Use tongs to remove the chicken from the pan whilst you finish the sauce.
  5. Stir in the diced Comté and continue cooking over a medium heat until the cheese has melted, giving the sauce a wonderful velvety texture. Stir through the chopped parsley then taste and season with salt, pepper and a dash of vinegar.
  6. Return the chicken to the sauce, or plate up the chicken and pour the sauce over the top. Serve with plenty of crusty bread to mop up the sauce.

Que rica debe quedar la salsa con ese estupendo queso. El pollo es una carne muy versátil para todo tipo de ingredientes, seguro que ha quedado de lujo.

This looks a lovely recipe.

I would probably use Gruyère if I couldn't get Comté cheese.

All the best Jan

Looks delicious. Interesting that you say mop up the sauce that's left with bread. We would never do that as it's considered bad manners, but I bet some people do down here. 😉
