Chocolate Blueberry Cake

Chocolate cake is probably on many hobby bakers' must-make list. But if a simple chocolate cake isn’t interesting enough for you, you can simply pimp up the cake recipe with a few fruits - for example with delicious blueberries. This chocolate blueberry cake is so quick and easy to make! The super moist sponge with chocolate tastes so delicious with fresh berries. It is perfect at any time of year, but especially in summer when the blueberries are at their juiciest. However, the cake also works perfectly with other seasonal fruit or alternatively with dried fruit. This cake is a hit at any party, over a cosy coffee with friends and family or as the highlight of a festive brunch. Fresh blueberries bring freshness and antioxidants to the cake, while dark chocolate adds that little something extra.

 
  • 200 g Dark couverture chocolate, chopped
  • 120 g Butter, diced
  • 5 Medium eggs, at room temperature
  • 150 g Erythritol
  • 100 g Ground almonds
  • 125 g Plain flour
  • 1 tbsp Cocoa powder
  • 1½ tsp Baking powder
  • 250 g Fresh blueberries
  • 1 tsp Icing sugar for dusting
  1. Preheat the oven to 180C/350F. Grease a 20cm springform tin with butter and dust with a little flour.
  2. Finely chop the dark chocolate and melt together with the diced butter over a hot water bath. In the meantime, beat the eggs at high speed and add erythritol to the eggs one tablespoon at a time.
  3. First add the melted chocolate and butter mixture to the eggs, then add the ground almonds. Finally, sift in the flour, baking cocoa and baking powder and fold in to combine.
  4. Pour half of the batter into the prepared springform pan and top with half of the blueberries. Pour in the remaining chocolate batter. Bake the cake in the preheated oven for 15 minutes. Remove from the oven and sprinkle the remaining blueberries on top and gently press down by hand.
  5. Return the cake to the oven and bake for a further 45-50 minutes until it no longer wobbles in the centre. Remove and leave to cool briefly on a wire rack before removing the cake to cool on a wire rack completely. Dust with icing sugar and serve.

I have actually seen recently blau berren in Lidl, but like a hand sized little plastic container LOL I am currently into spring potatoes, because they have finally arrived and the prices are going down slowly, will roast them morgen for lunchen.
