This beautiful autumnal salad is loaded with sweet and savory mix-ins, like crunchy fuyu persimmon, apple, dried cranberries, toasted pecans, and shaved Parmigiano Reggiano. A creamy nutty pistachio vinaigrette brings it all together. I used mâche as the salad base, but baby spinach, arugula or endivie all work great.

- In a blender, puree all the vinaigrette ingredients until the mixture is smooth and well incorporated. Chill until ready for use.
- Arrange the mâche on a large serving plate. Top with sliced persimmon and apples. Then scatter the dried cranberries and toasted pecans over. Finally shave some Parmigiano Reggiano all over the salad.
- Serve the salad with prepared pistachio vinaigrette.

...Angie, you always come up with new surprises.
We don't see many persimmons around here but occasionally there is one market that carries them. This is a beautiful salad.
The salad looks pretty and delicious!
Take care, have a wonderful week!
I don’t think I have ever had a persimmon. What am I missing?

I've never had a persimmon either, guess it's about time. That looks great!
Oh, so crunchy! Love it!
Beautiful salad!
El caqui que me gusta es de la variedad persimon, y esa vinagreta le iría genial también.
Yum.
