- Process the pistachios in a food processor until finely chopped. Add the parsley, garlic and cumin powder. Season well. Process until finely chopped. Add the drained beans, the lemon rind, juice, oil process until the bean mixture is smooth and combined.
- For the tomato salad combine all the ingredients in a bowl. Season. Set aside for 10 minutes to allow the flavours to develop.
- Spread the dip on a serving plate. Top with some of the tomato salad. Drizzle with the olive oil and sprinkle with dukkah and extra pistachios. Serve with grissini and remaining tomato salad on the side.

La unión frijoles-pistachos no se me hubiera ocurrido nunca. La entiendo más cuando es una crema porque así se puede dipear, y eso es lo que haré cuando la prepare, pues tomar porciones de la misma con palitos de pan es algo que nos encanta.
