Ricotta Fritters with Coffee Sugar

These airy crunchy fritters are a mix of drained ricotta, blanched almond flour, lemon zest, egg and panko breadcrumbs. They are then fried to beautifully golden and crispy with a tender, fluffy centre, served scattered with some espresso sugar. If desired, serve those delicacies with some extra berry coulis or coffee syrup.

 

Ricotta Fritters with Coffee Sugar

  • 250 g Ricotta, drained
  • 125 g Blanched almonds, ground
  • 50 g Caster sugar
  • 1 tsp Vanilla extract
  • Finely grated zest of 1/2 a lemon
  • 1/2 Egg
  • 25 g White spelt flour
  • 70 g Panko breadcrumbs
  • 500 g Ghee or avocado oil, to fry
  • 1 tsp Instant espresso powder
  • 70 g Raw sugar
  • 1/4 tsp Cinnamon powder
  1. Combine drained ricotta, ground almond, sugar, vanilla extract, lemon zest, egg and flour in a bowl. Scatter breadcrumbs in an even layer on a tray. Spoon rounded tablespoons of ricotta mixture onto the panko, gently coat in the crumbs, then place on a tray. Chill in the refrigerator for 30 minutes or up to 6 hours.
  2. Heat the ghee or avocado oil in a fry pan to 190C/375F. Set a wire rack over a baking sheet, top with paper towels and place it near the frypan.
  3. In batches, cook fritters until deep golden all over and cooked through, 3 to 4 minutes. Remove using a slotted spoon and drain on the paper towels.
  4. Combine espresso powder, raw sugar and cinnamon in a bowl. Scatter fritters with coffee sugar and serve hot.

Such inviting photos and arrangements!
We have Jacobs here as well, I hear one of your major supermarket chains kicked them out of their stores when they raised prices indecently, so now they just sell their own brand instead of Jacobs. Wish our stores would do the same with some of our greedy companies as well. It is insane how prices have gone up, for some things even up to %200!

Angie, Exotic but quite lovely looking with great ingredients. Ricotta fritters are new to me but I'm sure I'd gobble them up! That coffee sugar wouldn't hurt either. Love ricotta cheese. FYI, the only cheesecake I've ever eaten that I really enjoyed was still warm from the oven and it was made with ricotta cheese. Take Care, Big Daddy Dave
