Fig Salad with Arugula and Serrano

This simple and delicious autumn salad is chock-full of lovely ingredients including fresh figs, Serrano ham, toasted pinenuts, and a homemade shallot vinaigrette. Parma and Prosciutto ham are both good substitutes for Serrano, or replace the ham with cheese (freshly grated Parmesan, blue cheese or Feta) if you prefer. To make this more substantial, you could serve some quinoa or sourdough bread with it.

 
Shallot DressingSalad
  • 1 tsp Dijon mustard
  • 1 tbsp White wine vinegar
  • 3 tbsp Extra-virgin olive oil
  • Salt and black pepper
  • 2 Shallots, finely chopped
  • 100 g Arugula
  • 6 Fresh plump figs, quartered
  • 8 slice Serrano ham (or cheese of your choice if you prefer)
  • 2 tbsp Pine nuts, toasted
  1. Whisk together the mustard and vinegar in a bowl. Gradually whisk in the olive oil until emulsified. Season with the salt and a few good grinds of black pepper. Stir in the finely chopped shallots and leave the dressing to stand for 5 minutes before using.
  2. Gently toss arugula and quartered figs with the vinaigrette. Divide the salad between two plates. Top with serrano slices and sprinkle toasted pine nuts over. Serve immediately.

Feigen are always so decorative! Sadly, I can almost never find them here fresh. We had one in our yard, but it never developed nice juicy fruit before it died. I do love dried feigen much more than dates.

Serrano ham and figs together sounds heavenly to me. A few years ago, in Croatia, I had ham that was a kind of a cross between Serrano and prosciutto and it was F A B U L O U S - the best I have ever had. I swear there are special gnomes up in the mountains who make it. No one knows where they live and their secret curing process is unknown to the world at large!

I've been getting figs from a tree in my dad's yard every day for a few weeks now. I have to hurry to get to them before the squirrels do. ;-) This is a beautiful salad and I love the sweet and salty flavors together. ~Valentina

This is such a classic combination. Serrano ham is hard to come by in Tucson but I could use really good prosciutto and get a similar effect.
