Carnival Squash with Parmesan and Honeycomb

A hybrid between sweet dumpling squash and the acorn squash, the carnival squash (or carnival pumpkin) is nutty and sweet in flavour. They are excellent in salads, soups, or roasted as a side dish. The skin of carnival squash is bright, has so many varied patterns and completely safe to consume.
Roasting brings out the best in this squash. And honeycomb and freshly grated Parmigiano-Reggiano are just really special touches that take this autumn squash to the next level. This definitely deserves a place on your dinner table this season.

 

Carnival Squash with Parmesan and Honeycomb

  • 1 / 800 g-1 kg Carnival squash, seeds removed, cut into 3cm-thick wedges
  • 2 tbsp Extra virgin olive oil
  • Salt and pepper
  • Fresh thyme leaves
  • 1/2 Organic lemon, juiced and zested
  • 20 g Honeycomb (or 1 tbsp honey)
  • 30 g Parmigiano-Reggiano, finely grated
  • Mint leave, to serve
  • Coriander leaves, to serve
  1. Preheat oven to 200C/400F. Wash and halve the carnival squash. Scoop out the seeds and any stringy flesh. Cut into 3cm-thick wedges.
  2. Rub the squash wedges with half the olive oil on a large baking tray and season with salt, pepper and a few sprigs of thyme. Roast for 40 minutes or until soft and tender.
  3. Arrange the roasted squash wedges on a serving platter and drizzle with lemon juice and remaining olive oil. Top with honeycomb and scatter with lemon zest, finely grated Parmesan, mint and coriander.

Looks lovely und lecker. I just bought a squash yesterday, but the butternut one, will roast it with potatoes in the oven. I do love the pumpkin season as it gives me more options for veggie cooking. Hope we will have my fave Hokkaido squashes this year.
