Egg Salad Stuffed Snow Peas

Crunchy, light and delicious, these stuffed snow peas so easy to prepare and are great as an appetizer or anytime snack. If you are making them for a crowd, blanch and split the snow peas ahead of time, chill until ready to fill. The egg salad can be prepared ahead too. Besides egg salad, you can also use herb-flavoured cheese, chicken, tuna or crab meat to fill the pea pods.

 
  • 25 Fresh snow peas
  • 3 Large hard boiled eggs, chopped
  • 2 tbsp Dill (or parsley) stalk, finely chopped
  • 1 tbsp Shallot, finely chopped
  • 2 tbsp Homemade mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • Freshly milled black pepper
  • Fresh dill
  • Pink peppercorns
  • Pomegranate seeds, optional
  1. Blanch snow peas by placing in a bowl and pouring boiling water over them. Let stand for about a minute, drain immediately and place in ice cold water.
  2. In a bowl combine together the chopped eggs, chopped dill stalks, shallot, mayonnaise, Dijon mustard, salt and pepper.
  3. With a small sharp knife, slit open the straight seam of each snow pea to form a pocket. Spoon a heaping teaspoon of egg salad into each.
  4. Place them on a bed of fresh herbs or greens. Garnish each pod with dill, pink peppercorns and pomegranate seeds, if using. Eat immediately or refrigerate until serving.

What a gorgeous way to celebrate spring! Unfortunately, it’s still wintery in Toronto so these fresh, light snacks would definitely lift our spirits. Love that you can do much of the prep ahead of time. I’m going to check if we have the snow peas available yet.

Never had stuffed snow peas like this before. In fact , never had snow peas stuffed with anything before. The crunch of the snow peas and the creamy egg salad is a good match.
