Tangy, earthy goat cheese, fresh dill and toasty macadamia nuts come together in beautiful harmony. Creamy, cheesy and full of flavour, this soup is a lovely combination of tangy, earthy fresh goat cheese, homemade broth and cream. Goat cheese and dill are such a classic culinary combination and compliment each other so well while rich toasty macadamia nuts add extra flavour and crunch to the soup. It makes an elegant appetizer or a light meal when paired with a couple of slices of keto garlic bread.

- Peel and finely chop the shallots and garlic clove. In a large saucepan, saute chopped shallots and garlic in butter until tender. Pour in broth and bring it to a boil. Add in crumbled goat cheese and cream. Cook over mild heat until cheese is melted.
- Use an immersion stick and process the soup until smooth. Season with salt, pepper and lemon juice.
- Divide the soup into two bowls. Top with chopped dill and chopped toasted macadamias.

Yum! LOVE soup season, and it's that time again, isn't it? This looks really interesting -- don't often see goat cheese in soup. Nice combo of flavors -- thanks.
I bet that creamy soup is deicious with those nuts one of our favorites!
Never in a million years would I have thought of this delicious combination. A very easy and clever recipe. Thanks.
Goat cheese isn't my favorite, but it's healthy, so it's a guest in my kitchen from time to time.
Great soup to have in the winter months.
This sounds so creamy and flavorful! Looks like it would be perfect for a couple of lunches when it gets cooler :)
Terrific - that's definitely one of the most unique soup ideas I've seen. I love cheesy soup, and I also often add crumbled goat cheese as a topping for my soup, but it never would have occurred to me to melt it with the remaining ingredients. Wonderful!
Creamy and tasty. Love your presentation.
Cette soupe est bien gourmande comme j'aime
Bonne journée
Appetizingly elegant!

Angie, We both love cheese based soups but we've never seen or made goat cheese soup. Looks really good...although my better half would skip the macadamia nuts. Take Care, Big Daddy Dave

The way to my heart is through my stomach and you just touched my heart with this one. I have an addiction for goat cheese so this soup just makes me love you more :). You are one creative chef Angie!

I was just at the fennel-sesame bread post. Can I pair that bread with this soup? ;p
Can't say no to a cheesy soup, top with my favourite and premium macadamia nuts, no less.
Love your inventiveness. Don't think I'd ever have thought of making soup with goat's cheese. But it sounds delightful.
