One-pan Chicken with Bay, Garlic and White Wine

This one-pan chicken with bay, garlic and white wine makes an easy weekday meal with so much flavour! Ready in only 30 minutes. It's dairy-free, gluten-free and keto-friendly. I used dry, light-oaked Chardonnay, but a crispier Sauvignon Blanc would work just great too.

 

One-pan Chicken with Bay, Garlic and White Wine

adapted from Matt Moran via Delicious
  • 60 g Chicken schmaltz or olive oil
  • 1 Garlic bulb, halved horizontally
  • 8 (1kg) Chicken thighs, bone in, skin on
  • 3 Lemon thyme sprigs
  • 6 Bay leaves
  • 250 ml Dry white wine (I used Chardonnay)
  • 125 ml Chicken broth or water
  • 1/4 tsp Sea salt
  • 120 g Baby spinach
  • 2 Spring onions, thinly sliced, to serve
  • Flat parsley leaves, chopped, to serve
  1. Heat chicken schmaltz or olive oil in a large heavy-based pan over medium heat. Add garlic halves cut side down, and cook for 1-2 minutes until lightly browned. Remove garlic and set aside.
  2. In the same pan with the garlic-infused fat, cook chicken thighs 3-5 minutes each side until browned. Return garlic to the pan with lemon thyme and bay leaves. Add white wine, broth or water and salt. Swirl to combine. Bring to the boil.
  3. Reduce to low and simmer, covered, for 20-25 minutes, turning chicken a few times to baste in the liquid.
  4. Take off heat, add spinach and let residual heat wilt leaves.
  5. Scatter over chopped spring onion and parsley, and serve.

When I saw this dish it reminded me of one my daughter makes, almost the same but she only uses two bay leaves and omits the lemon thyme sprigs.. It's very good, but this recipe must have more flavour. I will show her your recipe.
