The nuts and seeds are held together here by the crashed linseeds, psyllium husks and water. (That is why the resting time is particularly important for the flourless bread.) This gives the bread a firm consistency and makes the bread particularly crunchy. This delicious seedy bread is super filling and contains lots of healthy ingredients and is bursting with fibre, protein, healthy fats and minerals. It is easy and can be prepared in no time at all. Be sure to try it out! It's gluten, dairy, sugar and egg free - an ideal bread alternative for those who have sensitive tummies or simply want to eat consciously. If desired, flavour the dough with some turmeric, fennel, and careway seeds. For a richer version, replace 50 ml of water with coconut oil.

Thursday, November 03, 2022Select chestnuts that are heavy for their size with tight, shiny shells. Dull and very light chestnuts may be older and already somewhat dried out. Holes in the shell indicate a worm infestation. If you are not sure, you can put the chestnuts in warm water. If the nuts are fresh, they will sink to the bottom.
The chestnuts develop their nutty-sweet aroma when roasted. Enjoy them plain or with some salt and butter. The chestnut puree is delicious either warm or cold. You can spread it on bread or serve it as a hearty dip with vegetable sticks as a snack or starter! The shell is best removed when the chestnuts are still hot. Make sure that the brown, furry skin is also removed.

Chill the tart until the cream is fully set for easier cutting or put it in the freezer for an hour if you are in a rush. Use coconut cream and coconut fat as substitutes if you are sensitive to dairy. While I have used a 23cm round tart pan, you could use whatever shaped tart pan or even individual-sized ones you have, but keep in mind this may affect the amounts of white chocolate ganache you’ll need.

Instead of this spicy cilantro-based sauce, you can also drizzle the roasted eggplants with a little pomegranate molasses. The tahini yoghurt and zhoug can be prepared one day ahead.
