Butternut Squash stuffed with Pesto Black Rice

Fill butternut squash halves with hazelnut pesto flavoured forbidden black rice and Feta for a quick, healthy and delicious weeknight meal. It's easy to adapt and alter the stuffing (quinoa, buckwheat, spelt, or bulgur) for the squash, depending on what you have on hand and what you fancy. Homemade pesto is fresher and infinitely more delicious, but if you are in a hurry, store-bought one will work just fine.

Parsley Hazelnut Pesto
  • 1 / 650-750 g Butternut squash, halved lengthways, seeds removed
  • 1 clove Garlic, crushed
  • 1 tsp Chilli flakes
  • Olive oil
  • Salt flakes
  • Black pepper, crushed
  • 100 g Black rice
  • 1 stalk Spring onion, chopped
  • 80 g Feta, crumbled
  • 50 g Hazelnuts, toasted
  • 40 g Parsley, roughly chopped, plus extra to sprinkle
  • 20 g Basil, plus extra to garnish
  • 60 g Hazelnuts, toasted
  • 50 g Parmesan, grated
  • 1 clove Garlic, crushed
  • Grated zest and juice 1 lemon, plus extra to serve
  • 80 ml Extra-virgin olive oil
  • Salt and pepper to taste
  1. Heat the oven to 220C/430F. Put the halved butternut squashes on a baking sheet, cut-side up, and rub the cut sides with the crushed garlic, chilli flakes and a little olive oil. Season with salt flakes and freshly crushed black pepper, then roast for 40-50 minutes or until tender.
  2. Meanwhile, make the pesto. Put all the ingredients in a food processor and whizz to make a rough paste. Season, if you like, with salt and pepper.
  3. Bring a small saucepan of water to the boil and add the rice. Simmer for 20 minutes until just tender but still with some bite left. Drain well and transfer to a mixing bowl. Stir in the chopped spring onion and pesto. Season to taste.
  4. Divide the pesto rice among the 2 cavities of the butternut squash halves. Sprinkle over the feta, then return the filled squash to the oven for another 10 minutes until the cheese has turned golden and everything is piping hot.
  5. Serve sprinkled with the toasted hazelnuts, chilli flakes, parsley and a squeeze of lemon.

Cumin-flavoured Beef Wonton Soup

The wonton, also spelled wantan, wanton, or wuntun, is a type of Chinese dumpling. They are made with a thin wrapper filled with tender, juicy seasoned ground meat or seafood and are available in steamed, deep-fried or in soup with or without noodles.

Filling
  • 200 g Ground beef
  • 1 Egg
  • 40 g Finely chopped spring onion
  • 5 g Cumin powder
  • 1/2 tsp Chicken bouillon
  • 2 tbsp Light soya sauce
  • 10 g Sesame oil
  • 1/2 tsp Ginger paste

  • 2 tbsp Water

  1. For filling, combine all ingredients except water in a bowl. Gradually add in water and mix with chopsticks until all the ingredients are well-blended and smooth.
  2. Position wonton skin with one point towards you. Spoon 1 rounded teaspoon of filling just below center of skin. Fold bottom point of skin over the filling. Roll up skin and filling, leaving 1 inch at the top of skin. Moisten the edges of the triangle and bring both points of the triangle base towards the center to form a wonton shape.
  3. Bring some water to a boil. Drop 20 wontons one at a time. Simmerangiesrecipes, uncovered about 3-5 minutes until the wonton float. Freeze the rest of uncooked in airtight containers. Boil directly from frozen for 6 to 8 minutes.
  4. At the same time, bring the broth, salt and carrot julienne to boiling in a saucepan. Place some wonton in the bowls and add in preserved cabbage, seaweed and green onion. Ladle the soup into bowls and drizzle with sesame oil. Enjoy!

Black Rice Spelt Scones with Arugula and Feta

Made with freshly milled black rice flour and spelt, these savoury scones with Feta, sour cream and arugula are rich, crumbly, full of flavours and great either for a morning tea or the perfect accompaniment to a bowl of soup for a comforting meal.

  1. In a large mixing bowl, whisk together the spelt flour, black rice flour, baking powder, baking soda and coconut sugar. Add in cold butter. Using fingertips, rub butter into flour mixture until mixture resembles fine breadcrumbs. Place it in the freezer for 30 minutes. This helps chill the butter, which will make the scones flakier.
  2. Take it out and crumble in Feta and add in chopped arugula. Stir in sour cream to get a soft dough.
  3. Turn on to a lightly floured work surface and knead very lightly. Pat out to a 2cm thick round. Cut into 8 wedges. Brush the top with sour cream and sprinkle some cracked black pepper over. Place it back to the freezer for 30 minutes. This again will help chill the fat, so that the scones would be flakier.
  4. Preheat the oven to 220C/425F. Bake the scones in the upper part of your oven for 18 to 23 minutes, or until they're a light golden brown.
  5. Remove the scones from the oven, and cool briefly on the pan. Serve warm.

Chinese Xiaolongbao (Soup-filled Dumplings)

Xiaolongbao, literally "Little Basket Buns",are traditionally filled with broth and pork, but beef, seafood, and vegetables are very often used as fillings. The broth inside is made by using some meat jelly inside the dumpling before steaming. Gelatin melts when steamed. Xiaolongbao always have soup, otherwise they are just Jiaozi / dumplings.

FillingWrapper
  • 300 g Ground pork
  • 2 g Salt
  • 8 g Sugar
  • 6 g Maggi sauce
  • 1/4 tsp White pepper powder
  • 1 stalk Spring onion, cut into sections
  • 20 g Ginger root
  • 150 ml Water
  • 2 tsp Sesame oil
  • 300 g Broth jelly
  • 350 g German #1050 flour / unbleached bread flour
  • 5 g Salt
  • 165 ml Cold water
  1. Use a heavy knife to smashed the ginger root. Place them in a bowl. Add in spring onion and water. Squeeze the mixture to release the juice from the ginger and onion. Strain. Season the ground pork with salt, sugar, Maggi sauce and pepper. Mix well. Gradually add in the prepared ginger-onion liquid and mix until all the liquid is absorbed and the mixture forms a firm and cohesive mass. Drizzle in the sesame oil and combine well. Dice the jelly and blend together with meat mixture. Cover with a plastic wrap and store in the fridge while prepare the wrappers.

  2. Whisk the flour and salt together in a mixing bowl. Add in water and start mixing by hand. Once the dough has come together, turn onto a floured work surface and knead dough until it becomes a smooth, elastic ball. Cover the dough with a plastic wrap and allow it to rest for at least half an hour.

  3. Half the dough lengthwise. On a floured surface roll each dough with palms back and forth to form a long rope of dough of even thickness. Portion the roll into 10-gram pieces and flatten each piece with the bottom of your palm. Use a rolling pin to roll the dough out forming a disk of 7cm with the edges thinner than the center. Hold a wrapper in your left hand and raise fingers up to form a recess. Place 2 teaspoons of filling in the middle of the wrapper. Carefully fold the edges of the wrapper together in a pleated fashion with the right hand. Pinch edges together to close the wrapper.

  4. Soak cheese cloth in hot water, wring out water and lay in a steamer. Besides cheesecloth, cabbages, carrot slices, and parchment paper are a good source of lining the steamers too. Put in the dumplings and set the steamer over a pan filled with boiling water. Close the lid and steam for 8 minutes over strong heat. Serve with a sauce dish of thinly shredded ginger and black rice vinegar.

Rijstevlaai / Dutch Rice Pudding Pie

"Rijstevlaai" (pronounced as raced-a-fly or raced-a-fla, depending on where you are from in Holland) is a delicious, creamy rice pudding pie that uses yeast dough instead of a pastry crust. It's filled with short grain rice cooked in milk, enriched with eggs and sugar. It can be served plain or whipped cream and some chocolate shavings atop. Serve cold or at room temperature.

DoughRice Pudding
  • 150 ml Milk at 20C/68F
  • 12 g Fresh yeast
  • 25 g Sugar
  • 240 g German#550 flour
  • Pinch of salt
  • 1 Egg
  • 25 g Butter
  • 600 ml Whole milk
  • 120 g Round grain rice
  • Pinch of salt
  • 1 Vanilla bean
  • 2 Eggs
  • 80 g Sugar
  • 10 g Vanilla pudding powder
  • 30 g Almond sliced (optional)
  1. In a bowl whisk together the milk, yeast and sugar. Combine flour and salt together in another mixing bowl. Pour the yeast mixture into the flour. Beat in egg and butter until the dough is fairly smooth. Cover with a cling film and let rise until doubled. Butter 10-inch-diameter springform pan. Press down the dough to release the air. Pat dough over bottom and sides of prepared pan. Cover and allow to rise until doubled.
  2. Bring milk to a boil in a large saucepan. Stir in rice, salt and vanilla bean, which can be used either whole or split to reveal the seeds and scraped into the rice. Bring them to a boil. Reduce heat to low and simmer uncovered until most of milk is absorbed and mixture is thick but still creamy, stirring frequently, about 30 minutes. Whip together 2 eggs, 80 grams sugar and pudding powder. Add the mixture into the rice and stir 2 minutes. Remove mixture from heat and cool to lukewarm.
  3. Preheat oven to 200C/400F. Pour the rice pudding into the risen dough and sprinkle the almond slices on the top of the pudding if using. Bake in the middle of preheated oven for 1 hour. Cool the cake completely in tin placed on a wire rack.

Black Rice Banana Muffins with Chia Seeds (Gluten free, Dairy free, Refined sugar free)

These healthy black rice muffins with chia & avocado oil are naturally gluten free, refined sugar free, and dairy-free. They’re so tender, fluffy, and very delicious too. Apart from that, they are sweetened naturally with 5 very ripe bananas. Bake a batch for breakfast, afternoon pick me up treat or anytime you have a dessert craving. Feel free to swap the black rice flour for brown rice or white rice flour.

  • 250 g Black rice, milled into flour
  • 30 g Chia seeds
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1/4 tsp Black salt
  • 1/3 tsp Nutmeg
  • 1 tsp Cinnamon powder
  • 5 Very ripe bananas, mashed
  • 2 Eggs
  • 30 ml Avocado oil
  • 30 ml Amontillado sherry
  • 80 g Golden raisins
  • 30 g Almond slices for topping
  1. Grease 6-8 jumbo muffin cups with coconut oil or butter. Whisk together black rice flour, chia seeds, baking soda, baking powder, salt and spices in a large bowl.
  2. Mash the ripe bananas in another mixing bowl. Add in eggs, avocado oil, and sherry. Stir to combine. Add to the dry ingredients and stir until just incorporated. Fold in golden raisins.
  3. Divide the batter among the prepared muffin cups. Top with almond slices. Preheat the oven to 180C/350F.
  4. Bake the muffins in the middle of hot oven for about 20-22 minutes or until a skewer inserted in the muffins comes out clean.

Red Rice Salad with Green Beans, Mushrooms and Sardines

Chewy, nutty, nutritious, this delicious red rice salad is perfect for outdoor eating on those hot summer days. It is great served with grilled beef, chicken or fish and pack up any leftovers for lunch the next day. It actually tastes much better the next day. The nutty, earthy flavour and crunchy, firm texture of red rice elevate the dish instantly, but you can use any brown rice in its place.

  • 250 g Red rice, boiled in salted water for 25 minutes, drained
  • 300 g Green beans, trimmed
  • 300 g Button mushrooms, sliced
  • 4 tbsp Olive oil
  • 1 tbsp Apple cider vinegar
  • 1/2 Lemon, juiced
  • 1 Garlic clove, minced
  • Black salt and freshly ground peppers
  • 1 stalk Celery, thinly sliced
  • 2 tbsp Chives, chopped
  • Red oak leaf lettuce
  • Sardines in olive oil, drained
  1. Boil the rice in plenty of salted water until just cooked, about 25 minutes. Drain.
  2. Meanwhile, prepare the roasted vegetables. Toss trimmed green beans and button mushrooms with 2 tablespoons of olive oil. Season with black salt and freshly ground peppers. Roast for 25 minutes or until tender.
  3. Place apple cider vinegar, lemon juice, the remaining olive oil and the minced garlic in a glass jar with a fitted lid. Season with salt and peppers and shake well.
  4. Tip the drained red rice into a large bowl. Pour the dressing over the warm rice and mix well. Let it soak in a little, then toss in the roasted vegetables together with roasting juice, sliced celery and chopped chives.
  5. To serve, place them over some salad greens and top with sardines.

Vegan Roast Pumpkin and Black Rice Salad with Pine Nuts

This vegan, gluten free salad, made with black forbidden rice, hokkaido pumpkin, red onions, parsley, Romaine lettuce, pine nuts and pomegranate seeds, has a unique mellow-sweet taste. The rich nutty, earthy flavour of black rice pairs really well with the bright acidity of white balsamic vinaigrette. If you can't find forbidden rice, use wild rice instead.

  • 180 g Black rice, rinsed
  • 1,5 kg Hokkaido pumpkin, deseeded, cut into thin wedges
  • 1-2 Red onion, cut into wedges
  • 4 tbsp Extra virgin olive oil
  • 2 1/2 tbsp White balsamic vinegar
  • 1 tbsp Maple syrup
  • 1 tbsp Fresh lemon juice
  • 1 tsp Dijon mustard
  • Romaine lettuce
  • Parsley leaves
  • Seeds of 1/2 pomegranate
  • 45 g Pine nuts, toasted
  1. Cook the rice in a saucepan of boiling salted water for 30 minutes or until just tender. Drain. Refresh under cold running water.
  2. Meanwhile, preheat oven to 200C/180C fan forced. Line a large baking tray with baking paper. Place pumpkin wedges on the prepared tray. Add onion wedges to trays.
  3. Combine 2 tbsp of olive oil, 1/2 tbsp of white balsamic vinegar and 2 tsp of maple syrup in a small bowl. Drizzle over pumpkin and onion. Season with salt and pepper. Roast for 40 minutes or until caramelised.
  4. Place lemon juice, Dijon and remaining 2 tablespoons olive oil, 2 tablespoons balsamic vinegar and the remaining 1 teaspoon of maple syrup in a bowl. Season. Whisk to combine.
  5. Combine rice, romaine lettuce, parsley, onion, half the pomegranate and pine nuts in a large bowl. Drizzle with half the dressing. Toss to combine. Arrange half the pumpkin on a platter. Top with half the rice mixture. Drizzle with half the remaining dressing. Repeat with remaining pumpkin, rice mixture and dressing. Sprinkle with remaining pomegranate and pine nuts.

Shirataki Spaghetti Stir-fry with Shrimp

Shirataki (shee-rah-TAH-kee) noodles are made from Konjac flour, which comes from the roots of the yam-like Konjac plant grown in Japan and China. They are mostly composed of a dietary fiber called glucomannan and contain very few calories and carbohydrates. ( or even carb-free). Some shirataki noodles are made out of tofu, which have a small amount of carbs.
Shirataki are typically sold in wet form -- the noodles are bagged in liquid. All it requires is rinse and drain them before using for the recipe. They do not have much flavour by themselves, but absorb flavors well from other ingredients you can combine them with. You can easily find shirataki noodles at Asian stores or online.

  • 200 g Shirataki spaghetti, drained
  • 200 g Shrimp, shelled
  • Salt and pepper
  • 2 tbsp Olive oil
  • 1 tsp Ginger root, shredded
  • 1 tsp Garlic, chopped
  • 150 g Chinese cabbage, shredded
  • 100 g Carrot, shredded
  • 100 g Leek, shredded
  • 50 g Radicchio, shredded
  • 3 tbsp Sweet chilli sauce
  1. Drain and rinse shirataki noodles very well. Set aside. Season the shrimp with salt and pepper. Add 1 tablespoon of olive oil into a skillet over medium heat. Once the oil is hot, add in seasoned shrimp and cook until they turn pink. Remove and place them in a bowl.
  2. Add the remaining olive oil into the skillet, then garlic and ginger. Cook for a few seconds, then add in all the shredded vegetables. Cook for a minute. Add shirataki spaghetti, stir-fry 2 minutes. Stir in sweet chilli sauce and shrimp, heat through. Taste and season with salt and pepper if needed. Serve immediately.

Gluten Free Brown Rice Bread

This bread is a staple in our house whenever we go wheat-free. It is soft, moist and tastes almost just like a hearty dense sourdough bread. Don't leave out or replace the eggs with applesauce as they not only serve as the natural leaveners, also add moisture, flavour and protein to the bread. Mungbean starch is used as a thickening agent to replace the gluten. You can of course substitute it with tapioca or potato starch.

  • 420 g Organic brown rice, ground into flour
  • 70 g Mungbean starch
  • 1/2 tbsp Baking powder
  • 3/4 tsp Baking soda
  • 3/4 tsp Salt
  • 480 ml Buttermilk
  • 3 Large eggs
  • 1 tbsp Honey
  • 1-2 tbsp Flaxseed, optional
  1. Preheat the oven to 180C/350F. Line a 9x4-inch loaf pan with parchment paper.
  2. In a large mixing bowl, combine together the brown rice flour, mungbean starch, baking powder, baking soda and salt. Mix in the buttermilk, eggs, and honey. Stir with a wooden spoon until well combined and lump free.
  3. Pour the batter into the prepared pan and sprinkle the top with flaxseed if desired. Bake for about 1 hour. Remove from the oven and cool the bread in the pan for 15 minutes before turning out onto a wire rack to cool completely.

Brown Rice Pilaf with Dried Figs and Pomegranate

A pilaf or pilau is a Middle Eastern rice dish that is cooked in broth and spices. It may contain a variety of vegetables and meat. This is a delicious recipe for using up leftover roasted chicken or turkey, and works well with seafood too.

  • 1 tbsp Butter
  • 1 Shallot, diced
  • 1/3 tsp Allspice, ground
  • 1 clove Garlic, crushed
  • 180 g Long-grain brown rice
  • Sea salt and freshly ground pepper
  • 550-600 ml Vegetable broth or water, warmed
  • 100 g Dried figs, diced
  • 200 g Leftover roasted chicken breast
  • Some leftover roasted Brussels sprouts, cut into wedges
  • 1 tbsp Chopped parsley
  • 1 handful Pomegranate seeds
  1. Melt the butter in a saucepan over medium heat. Add the shallot and saute until tender. Add in allspice and crushed garlic and stir briefly.
  2. Add in brown rice and stir until the rice is coated with the butter. Pour in vegetable broth. Bring to the boil then immediately turn down to a simmer. Cover and cook for 30 minutes. Turn off the heat. Add in dried figs and let sit, covered, for 10 minutes.
  3. Season with salt and pepper and gently fork through the roasted chicken, Brussels sprouts and chopped parsley. Shower with pomegranate seeds at the last minute.

Black Rice Bread with Peanuts

A nutty, mild sweet loaf made with a mix of wholegrain spelt and bread flours. Thanks to the black venus rice and roasted peanuts, this light-textured everyday bread is exquisitely nutty, nicely moist, distinctly delicious and makes a nice change from a plain sandwich loaf.

  • 200 g Wholegrain spelt flour
  • 220 Bread flour
  • 8 g Dried yeast
  • 190 ml Milk, lukewarm
  • 40 ml Olive oil
  • 1 Egg
  • 30 g Raw sugar
  • 6 g Sea salt
  • 150 g Cooked black rice
  • 120 g Roasted and unsalted peanuts, roughly chopped
  1. In the bowl of your stand mixer, whisk together the spelt flour, bread flour, and dried yeast. Make a well in the center, add in milk, olive oil, egg, raw sugar and sea salt. Stir at first on low speed until a rough dough begins to form. Increase the speed and beat until the dough is smooth and elastic. Now adjust the speed to low again, add in cooked black rice and chopped peanuts. Stir until they are well-distributed throughout the dough.
  2. Turn out the dough and shape into a ball. Return it to the mixing bowl. Cover with a kitchen towel leave it in a warm place for an hour or until it’s doubled in size. Divide the dough into 3 portions and shape each into a round. You can also divide the dough 12-15 portions and make them into dinner buns.
  3. Place 3 round balls into a parchment paper lined loaf pan. Cover again with the towel and set aside in a warm place for a 50 minutes to rise.
  4. Preheat the oven to 190C/375F. When the loaf has risen, brush the surface with water and bake for 30 minutes until nicely golden brown.
