Coffee isn’t only meant for breakfast! Ground coffee powder makes a truly tasty spice rub that creates a deeply savory crust on meat, adding a rich, smoky, and earthy depth that you can't get from salt and pepper alone. These coffee rubbed lamb chops are infused with warming, fragrant spices and rich coffee grounds for a flavour that's both unique and delicious.
| | Coffee Rub | Sumac Onions |
- 8 Lamb chops
- ½-¾ tsp Fine sea salt
- 3 tbsp Tallow, melted or olive oil
- ½ Lemon
- 5 Spring onions, trimmed and sliced lengthways in half
- Fine sea salt
|
- 1 tbsp Espresso powder
- Seeds from 15 cardamom pods, finely crushed
- 1 tsp Cumin seeds, finely crushed using a pestle and mortar
- 1¼ tsp Chipotle chilli flakes
- ¾ tsp Smoked paprika powder
- 1 tsp Soft light brown sugar
|
- 1 Small red onion, finely sliced
- 2 tsp Sumac
- 1½ tbsp Lemon juice
- A pinch of sea salt
|
- Combine all the ingredients for the rub in a medium bowl. Pat the lamb well dry on paper towels and season with sea salt. Coat well with the rub, then leave to marinate at room temperature for 1 hour or up to 3 hours.
- Make the onions by placing all the ingredients in a bowl with a pinch of salt and using your fingers to massage everything together. Set aside to pickle gently while the lamb is marinating.
- If you’ve refrigerated the lamb, be sure to bring it back up to room temperature before cooking. When ready, place a large cast-iron sauté pan over a medium-high heat. Toss the lamb with the melted tallow or olive oil. Once the pan is hot, cook the lamb chops for 2–3 minutes on each side, for medium-rare. Adjust the cook time if you prefer them more or less well done (or if they’re smaller or larger in size). Arrange them on a serving plate and pour over all but a couple teaspoons of the fat left in the pan, then squeeze over the lemon.
- Return the pan to a medium-high heat with the spring onions and a tiny pinch of salt and cook for about 3 minutes, flipping over as necessary, until softened and lightly browned. Serve the lamb chops with spring onions and sumac onions.

Looks amazing and I just love lamb chops, Angie.
How interesting! I've never heard of using coffee as a spice rub. My mom loved lamb chops! She made them a few times a month when I was a kid.
I should try coffee in a meat marinade sometime thanks for the inspiration.-Christine cmlk79.blogspot.com
Angie, this is a work of art!
Hope you are having a nice weekend, it is very cold here and finally rainy after two months of drought.
You know, lamb might be my favorite meat. It's so flavorful! So I adore lamb chops, whether from the rib or the shoulder. I've had them so many ways, but never with a coffee rub. I'm intrigued to try!
Oh, the influence of coffee! Always great to see!
Looks so savory and much more. YUM!
Habrá que probar ese adobo, para mi es completamente original, pero como el café me gusta, no creo que esos sabores unidos me decepcionen.
Thank you for all the great ideas you give me Angie. I would never have thought to use coffee in a main meal before. Looks delicious!
Hello Angie,
Another delicious looking meal, thanks for sharing the recipe.
Have a happy weekend.
I would have to try this with Pork chops because I can't find Lamb chops here. Looks very good.
I love lamb chops, dear Angie! The presentations are gorgeous!
Coffee is such an interesting twist, looks so good!
Looks scrumptious
Gracias por la receta. Te mando un beso.
How interesting, Angie! Seasoning with coffee—it never would have occurred to me. I'll give it a try to see what it tastes like.
Best regards,
I love lamb -- like Frank, I think it is my favorite meat. Even though I am not a coffee drinker, I have had staks rubbed with coffee and liked them a lot. I think this is a terrific recipe.
That looks absolutely mouthwatering!
Yummm! 😋
Love the spices you added to the coffee for the rub.
Absolutamente original y sorprendente!
Te felicito Angie!
Buen domingo; buena semana! :)
That's not lamb chop the puppet is it
Looks good. Cannot go wrong with coffee-anything! :-D
I've read about people using coffee rubs and I was curious about them. Thanks for the recipe. I didn't realize they contained other spices too, and this one sounds tasty. Happy rest of your weekend.

I love coffee crusted meats, and you've done a beautiful job with it! Great choice to do this with lamb.
Lamb is fairly expensive here.
Eu evito carne de porco, mas esse seu prato parece apetitoso.

this sounds like an excellent rub Angie!
I’ve never thought of using coffee as a rub for lamb, but the combination of espresso, cardamom and smoked paprika is really interesting. The sumac onions must add a lovely tangy contrast to the rich, spiced meat.
Angie, many thanks for sharing the idea to use coffee as a spice rub in this recipe/dish.
All the best Jan
This is such a clever, punchy way to elevate lamb chops.
