A simple warm zucchini salad that’s bursting with flavours and textures. The zucchini slices are first charred grilled, then dressed in a lemon dill vinaigrette. Red currants offer a tart and sparkling flavour that works beautifully with mellow zucchini. Plus, they add a pop of bright, glossy red to the salad. If desired, add some toasted nuts or seeds for the crunch. Enjoy them as is, with some roasted chicken or steak, or serve over a bed of hummus or Greek yoghurt.

- 800 g Zucchini (I used yellow one)
- Sea salt
- Chicken schmalz
- 3 tbsp Olive oil
- 4 Garlic cloves, finely chopped
- 1 Green chilli pepper, sliced
- Juice of ½ lemon
- 2 tbsp Dill, chopped
- Red currants
|
- Cut zucchini into 1.5 cm-thick slices and season both sides with salt. Place the salted zucchini slices on a tea towel in a single layer to drain for about 30 minutes. Blot dry the zucchini with paper towels.
- Heat some chicken schmaltz in a grill pan or frying pan and fry the zucchini slices, in batches, over a medium heat for 5 minutes each side until lightly charred and just tender. Transfer to a large platter.
- In the same pan, add olive oil, garlic cloves, and chilli. Fry gently over a medium heat for 2–3 minutes, until it smells fragrant. Remove and mix in lemon juice and chopped dill. Pour the dressing over the warm zucchini and garnish with red currants. Serve them over a bed of hummus or Greek yoghurt.

I love zucchini and this sounds good.
Excellent! We often eat zucchini baked this way with garlic, but without the peppers. Now I'll add your ingredients: currants and the rest.
Ależ piękna sałatka. Takiej jeszcze nie robiłam. Idealna na kolację latem.
Gorące uściski 🙂

Lovely salad, something different to do for zucchini
The reason why my posts don't appear in your reader is probably because I already published many posts a few years ago but I didn't contact other bloggers so the texts were on the blog without comments, now that we have Google Translate I can read blogs of all bloggers around the world and write comments. You can also read my texts and comment. Since my texts have already been published now when I change the publication date in the editor the posts don't appear in the lists. I don't know how it works exactly but I think that's the main reason. Best regards, Jasna
I start baking potatoes with vegetables... delicious! I invite you to check out my profile where I added another blog, Photo showcase with my photos. Wishing you a nice day... Andreja!

Hi Angie. It has been so long since I drop by here. Sorry for the absence, been super busy over here.
That is one beautiful and colourful salad. I actually haven't tasted zucchini, wonder how it tasted like.
Brilliant! Great to see this dish! So inspiring 💛
The vinaigrette sounds amazing with this! YUM! ❣️❣️❣️❣️❣️❣️
That sounds so good! Currants are not available here. Perhaps red grapes would work?
This looks amazing! Thank you for the recipe.
Ein toller, schmackhafter Sommersalat. Ich kann mir vorstellen, wie wir abends auf der Terrasse sitzen und den feinen Salat mit etwas Brot genießen.
Beautiful presentations, Angie!
Se ve muy rico. Gracias por la receta. Te mando un beso.
What a delicious combination . We h=just had a cold zucchini salad last evening but I love the idea of a warm one. No currants here so I will use pomegranates off the tree.
After last week’s zucchini fritters recipe (that I tried and enjoyed, by the way), I got quite a bit of zucchini. I’m going to try this recipe as well.
A very summery dish
That is a lovely salad

The red currants offer such a beautiful pop of colour!
Hello Angie,
The salad looks delicious and pretty. Thanks for sharing.
Take care, enjoy your day and happy weekend.
Beautiful! I guess your fresh currants grow locally?
That certainly does look good and another way to use zucchini.
I have several zucchini from my garden in the fridge right now, so this is topical.
Wonderful recipe. We have grown green ones, so I'll use those.
